Introduction. The Brazilian Savannah presents a wide vegetable diversitythat produces fruit that have unique characteristics and should be better characterizedand exploited. The agricultural-economic exploration of the fruits from the Savannahcontributes to income generation and may play an important role in improving humannutrition. The aim of our research was to evaluate the physical characteristics (diameter,height and mass), chemical composition (moisture, ash, proteins, lipids, dietary fiber,titratable acidity, soluble solids and pH), occurrence and content of vitamin C (ascorbicacid and dehydroascorbic acid), carotenoids (α-carotene, β-carotene, β-cryptoxanthin andlycopene), vitamin E (α-, β-, γ- and δ-tocopherols and tocotrienols) and folates(tetrahydrofolate, 5-methyltetrahydrofolate and 5-formyltetrahydrofolate) in pequi fromthe Savannah of Minas Gerais, Brazil. Materials and methods. Analyses ofcarotenoids and vitamin C were carried out by HPLC-DAD, and vitamin E and folates by HPLCwith fluorescence detection. Results. The pulp of cooked pequi presented highcontents of dietary fiber (9.9 g·100 g–1), lipids (33 g·100 g–1), carotenoids (8.11 mg·100g–1), vitamin C (14.33 mg·100 g–1), vitamin A (514.38 RAE·100 g–1) and total energy(317.19 kcal·100 g–1). Contents of folates and vitamin E were 5.1 μg·100 g–1 and 110.52μg·100 g–1, respectively. Conclusion. The pulp of cooked pequi presents ahigh energy value, as well as elevated contents of dietary fiber and lipids. It is a goodsource of vitamin C and an excellent source of vitamin A. The nutritional value and thewide availability of pequi make it an important tool for the reduction of food andnutritional insecurity.

Introduction. Au Mali, la production annuelle de mangues est estimée à 100 000 t. Du fait de problèmes structurels et phytosanitaires principalement liés à l'action des mouches des fruits, rarement plus de 1 % de cette production est exporté. L'objectif principal de cette étude a été de mettre au point une lutte raisonnée contre les Tephritidae du manguier au Mali à l'aide de traitements par taches. L'un des préalables a été d'identifier les espèces responsables des dégâts dans les trois zones principales de production (Sikasso, Bougouni, Bamako). Matériel et méthodes. Des mangues appartenant aux principales variétés exportées ont été collectées de début avril à début octobre 2000 et mises en observation afin d'identifier les espèces de Tephritidae présentes dans les fruits. La pose de pièges à attractifs sexuels ou alimentaires a permis de suivre l'évolution et la constitution des populations de mouches des fruits dans les vergers des trois sites choisis. L'efficacité d'une méthode de traitement par taches pour lutter contre les cératites a été testée. Résultats et discussion. À partir des observations et de la détermination des adultes, six espèces de Tephritidae ont été mises en évidence. Parmi elles, Ceratitis cosyra (Walker), C. quinaria (Bezzi) et C. silvestrii Bezzi ont été les plus précoces et sont donc les plus préjudiciables. C. cosyra a représenté 86 % de l'effectif total des mouches. Les espèces C. anonae, C. quinaria, C. fasciventris et C. ditissima ont été identifiées pour la première fois au Mali. Les dégâts dus aux Tephritidae en milieu de campagne ont avoisiné 50 % de la production des variétés Kent et Keitt et dépassé 60 % de celle de Brooks. Les 180 pièges mis en place sur les trois sites suivis ont permis de capturer un total de 128 998 Tephritidae adultes appartenant à treize espèces ; les six espèces inféodées au manguier ont représenté 99 % de cet effectif. Les traitements par taches effectués sur les trois sites expérimentaux ont donné des résultats encourageants, avec une réduction des dégâts d'environ 50 % sur les parcelles traitées par rapport aux parcelles témoins. Conclusions. Pour prolonger l'action entreprise, il sera intéressant de confirmer et approfondir les résultats obtenus au cours des années à venir. La mise en place d'un projet régional de lutte contre les Tephritidae du manguier pour l'Afrique de l'Ouest serait fondamentale à moyen terme pour limiter un tel ravageur qui sévit lui-même à l'échelle de la sous-région.

Introduction. Kinnow is an important citrus crop grown in India, which suffers from several postharvest diseases during storage. Hence, an attempt was made to combat such diseases with the botanicals Aloe vera, Eucalyptus and Ocimum on Kinnow mandarin to prolong its availability for a longer time. Materials and methods. For this, in vitro and in vivo studies were conducted. The poisoned food technique was used for in vitro studies, and, for in vivo studies, Kinnow fruit were pre-inoculated with pathogens (Penicillium digitatum and P. italicum), treated with different botanicals, then stored at (5 ± 1) °C temperature and 85–90% RH. Results and discussion. Our results indicated that all botanicals inhibited the growth (colony diameter) of both pathogens over untreated PDA plates, but the inhibition was the strongest by Aloe vera extracts. Similarly, under in vivo conditions, all botanicals influenced the decay incidence, decay loss, lesion diameter, respiration rate, ethylene evolution and physiological loss in weight, but Aloe vera was the most effective. All the botanicals were able to retain postharvest quality of Kinnow fruits without any adverse effect on quality parameters such as TSS, TA and ascorbic acid. Under in vivo conditions, the incidence of Penicillium italicum was higher than P. digitatum; however, it was the reverse under in vitro conditions. Conclusion. Thus, it is evident from our studies that botanicals have the potential to control green and blue mold without causing any injury or harmful effects on Kinnow mandarin; botanicals can be recommended as a safe method for extending its storage life while maintaining fruit quality at the same time.

Introduction. Different cultivars of lychee are produced all around the world and to date no information has been published on the nutritional value of cv. Tailandes, which is a new lychee cultivar introduced into Brazil and other tropical countries. Our study performed a pioneering evaluation of the physical and chemical characteristics, carotenoids, vitamins, and minerals in pulp of fruit of this cultivar. Materials and methods. Titratable acidity was determined by volumetric neutralization, pH by potentiometry, soluble solids by refractometry, moisture by gravimetry after oven drying, ash by calcination in a muffle furnace, proteins by the micro-Kjeldahl method, dietary fibers by the gravimetric non-enzymatic method and lipids by gravimetry after extraction in ethyl ether. Vitamin C (ascorbic and dehydroascorbic acids) and carotenoids (a-carotene, b-carotene, b-cryptoxanthin and lycopene) were analyzed by high-performance liquid chromatography (HPLC) with diode array detection, vitamin E (a-, b-, g- and d-tocopherols and tocotrienols) was analyzed by HPLC with fluorescence detection, and fourteen minerals were analyzed by atomic absorption spectrometry in inductively coupled plasma. Results and discussion. The lychee cv. Tailandes showed high pulp yield (59.0%), moisture (80.7 mg×100 g–1) and dietary fiber (2.2 g×100 g–1), and a low total energy value (70.2 kcal×100 g–1). It presented no carotenoids, but was an excellent source of vitamin C (34.7 mg×100 g–1). The total vitamin E content was 117.0 g×100 g–1. Pulp of lychee cv. Tailandes was shown to be a source of iron (0.86 mg×100 g–1) and magnesium (12.90 mg×100 g–1), a good source of copper (0.12 mg×100 g–1) and an excellent source of potassium (1067.33 mg×100 g–1). Conclusion. The lychee cv. Tailandes showed high pulp yield and low total energy. The pulp is a source of dietary fiber, vitamin C, iron, magnesium, copper and potassium.

Introduction. The worldwide production of banana and plantain, which is estimated to 106 Mt·year–1, relies on a narrow genetic basis. Thus, banana production is fragile regarding emergent diseases, and creation of new varieties of banana stands out as a real necessity for its sustainability. In banana, various improvement strategies aim to create triploid hybrids. The objective of this report is to present a simple in vitro methodology to induce stable tetraploid plants by colchicine treatment, usable as parent for obtaining triploid varieties. Materials and methods. Twenty-one diploid M. acuminata clones and three interspecific M. acuminata / M. balbisiana diploid clones were treated as proliferating culture in liquid medium with 1.25 mM of colchicine for 48 h. Plant screening has been performed by morphological identification in greenhouse, chromosome counts on root tips and flow cytometry on leave blades on vitroplants using propidium iodide staining. Results. Chromosome counts led to distinguish diploid and tetraploid plants but did not afford to detect chimeras. Flow cytometry allowed an early screening of a larger number of plants leading to detect rapidly chimerical plants. It was observed that some stable 2x / 4x cytochimeras are periclinal. Tetraploid clones were obtained with all diploid genotypes. General behaviour of tetraploids in the field was globally weaker than the corresponding diploids. Nevertheless, all the doubled-diploids flowered and crossed with diploid plants to obtain triploid progenies. Conclusion. This study has clearly shown that induction of stable doubled-diploid plants can be obtained from a wide range of genetically different bananas. These results open the way to the systematic use of doubled-diploids by banana breeding programs for the release of enhanced triploid varieties.

Introduction. Dennettia tripetala G. Baker (Annonaceae), or pepper fruit tree, is a well-known Nigerian spicy medicinal plant. The mineral, vitamin and nutrient composition of the fruit of Dennettia tripetala were determined. Materials and methods. Ripe fruits of Dennettia tripetala were analysed for proximate composition, and mineral and vitamin contents. Results and discussion. Our work showed that Dennettia tripetala contained crude protein (15.31%), total carbohydrate (62%), crude fibres (9.84%), crude lipids (3.47%) and moisture (8.0%). It had a calorific value of 480.24 g cal·100 g–1 of fresh fruit, and mineral content comprised: calcium (1.80%), phosphorus (0.33%), potassium (2.50%) and magnesium (0.42%). Trace elements included iron, copper, zinc and cadmium, but chromium was not detected. The water-soluble vitamins include ascorbic acid, thiamine, riboflavin and niacin. Conclusion. Our work justifies the use of Dennettia tripetala fruits as food and a drug in herbal medicine in Southeastern Nigeria.

Introduction Mango (Mangifera indica L.) is a crop of major economic importance in the provinces of Malaga and Granada (SE Spain). A field experiment on mango trees was designed to determine the optimum irrigation scheduling over three seasons. The aim was to evaluate the impact of sustained-deficit irrigation (SDI) strategies on fruit yield and quality, tree growth, and mineral status under a Mediterranean subtropical climate. Materials and methods. Three sustained-deficit irrigation treatments were applied to mango trees: SDI-1 (33% ETc), SDI-2 (50% ETc) and SDI-3 (75% ETc). The stress treatments were compared with a control (C-100) irrigated at 100% ETC. The response of fruit yield, number of fruits, fruit size and quality, and macro- and micronutrients in leaves was determined. Results. The SDI-2 treatment proved to be the most appropriate SDI treatment, since it allowed the trees to reach the highest yield (18.4 t·ha-1) and the best water-use efficiency (7.14 kg·m-3). However, fruit size was higher for trees of the SDI-3 and C-100 treatments, since they reached significantly higher length and width. The total soluble solids were affected by the SDI treatments only for one year, being highest in fruits from trees of the SDI-1 and SDI-2 treatments. Macro- and micronutrients in the leaves were affected by the SDI treatment only for the P, Mg and Mn contents. Conclusion The SDI treatment providing 50% of ETC is recommended for mango orchards in order to attain the highest yields and the best water-use efficiency under a Mediterranean subtropical climate.

Introduction. The fruit of the date palm (Phoenix dactylifera L.) is an important crop of the arid and semi-arid areas of the world. It has always played a genuine economic and social part in the lives of the people of these areas. Nevertheless, there are few studies related to the composition and the functional properties of the different components (fibres, fats and proteins) of the date seeds. In order to obtain more information on the nutritive value and the chemical composition of the pits of the most important and most valuable Tunisian date palm varieties (Deglet Nour and Allig), we studied their profiles of proteins and amino acids. Materials and methods. Date seeds of two Tunisian cultivars, Deglet Nour and Allig, were separately milled in a heavy-duty grinder to pass 1–2 mm screens; then, they were preserved at – 20 °C until analysis. The soluble proteins from defatted date seeds were extracted with water at pH 10, and were analysed by sodium dodecyl sulphate polyacrylamide gel electrophoresis (SDS-PAGE). Results and discussion. Amino acid profiles revealed that date seeds from the Deglet Nour and Allig varieties contained the majority of essential amino acids: lysine, isoleucine, leucine, methionine, threonine, valine and phenylalanine. Seventeen amino acids were detected in the seeds of the two studied cultivars. Glutamic acid was the major amino acid in Deglet Nour and Allig date seeds, representing 17.83% and 16.77%, respectively, of the total amino acids. Date seeds appeared to contain a number of proteins with molecular weights ranging from 22 kDa to 70 kDa. Three prominent bands appeared at 32 kDa, 60 kDa and 70 kDa.

Introduction. A previous paper showed that Al in the nutrient solution affected thegrowth, biomass production and chemical composition of bananas (Musa spp.). This paper aims atproviding complementary results on the effect of Al on water and nutrient uptake by young banana plants.Materials and methods. Vitroplants of five cultivars (Grande Naine, Agbagba, Obino l'Ewaï, Igitsiriand Kayinja) were grown for 40 d in a phytotron with a temperature close to that of their cropping areas.Dilute nutrient solutions without Al and with 78.5 μM Al were supplied continuously with peristalticpumps. Measurements of daily water and nutrient uptake were carried out twice a week. Rhizosphereacidification or alcalinisation were also monitored. Results and discussion. Aluminium reduced plantwater uptake and cumulative detrimental effects were observed. After 40 d, water uptake was only 30-40% of the control. Without Al, nutrient uptake (Ca, Mg, K, P, NO3-N, NH4-N) increased with time,whereas Al inhibited the uptake of all elements, particularly Mg. As for water absorption, cumulativeeffects were observed: after 40 d, most nutrient uptake rates were reduced by more than 50% relatively tothe control. The plantain bananas, Agbagba and Obino l'Ewaï, were more resistant to Al than the others.Changes of temperature are likely to modify Al sensitivity as one cultivar, Kayinja, showed greater Alsensitivity at 28/25°C than at 24/20°C.

Introduction. The increase in diabetes and obesity has increased the demand for reduced sugar products such as jams and jellies. Four jelly formulations were prepared using date juice which was enriched with pectin and lemon flavors. Materials and methods. Reduced quantities of sugars (45% and 55%) were added to the juice at different pH (3 and 3.5). The prepared jellies were evaluated for physico-chemical and sensory properties. Results and discussion. The water activity values for jellies ranged between 0.767 and 0.804, making them safe from the development of the majority of bacteria. The addition of less quantity of sugar, as well as the decreased pH, resulted in significantly firmer jellies, with higher adhesiveness, chewiness and cohesiveness. Sensory evaluation showed that the prepared jellies averaged 4.17–5.47 and 4.59–5.67 for taste and firmness, respectively, in a 7-point hedonic scale consumer acceptance study. The most appreciated jellies were those prepared with the lowest sugar content, with a slight preference for that with a pH of 3.5. Significant differences were not found between scores for the other sensory attributes (color, transparency, brightness, odor and springiness).

Introduction. African fruit production, as well as regional andinternational fruit trade, have experienced heavy economic losses over the past decade dueto the damage caused by fruit flies, especially B. invadens Drew Tsuruta& White (Tephritidae: Diptera). Bactrocerainvadensattacks fruits belonging to numerous botanical families, several of which are of greateconomic importance. The females of these flies generally lay their eggs in mature fruits,but some can lay in green-immature fruits. Materials and methods. Theinfluence of the species, variety and phenology of fruits on the fruit attractiveness toB. invadens and the elicitation of B. invadensegg-laying behaviour were studied in the laboratory. Fruits harvested regularly during theyears 2008 and 2009 from orchards in the Niayes area (Senegal) were exposed to gravidfemales in cages set for the different factors tested. The exposed fruits were thenincubated and the pupae emerging from them were counted. Results anddiscussion. Bactrocera invadens females laid eggs in ripefruits. Within the same fruit species, the variety plays an important role in egg-layingpreference. Hence, among the mango varieties tested, the Pêche variety hosted the highestnumber of pupae per fruit, while the Palmer variety hosted the lowest number. Comparisonamong different fruit species showed that mature papaya was more infested than maturemango or citrus. Furthermore, flies were unable to develop on lime.Conclusion. Our study showed that B. invadens can infestgreen and ripe host fruits, and even immature abscised fruits. Consequently, management ofthis pest must include preventive measures in the development and implementation of anintegrated management system.

Introduction. Les techniques de multiplication in vitro de bananiers ne sont pas adaptées aux paysans. Par ailleurs, l'utilisation de techniques de pépinière in vivo permet d'augmenter le taux de multiplication des bananiers au champ, mais elle présente le risque de multiplier du matériel contaminé et de perdre de nombreux bourgeons présents sur le pied mère. Pour pallier ces problèmes, nous avons mis au point au CARBAP (Cameroun) une nouvelle technique de multiplication de masse in vivo, la technique des “plants issus de fragments de tige” (PIF) qui permet d'activer des bourgeons latents et de produire rapidement hors sol des quantités importantes d'un matériel de plantation sain. Matériel et méthodes. L'activation des bourgeons latents a été testée au cours d'une première expérience. Des explants munis d'un seul bourgeon ont été prélevés sur des tiges de bananiers de trois variétés de plantain (AAB) et d'une variété de banane (AAA), puis ils ont été ensemencés dans un germoir. Une deuxième expérience a testé les capacités de prolifération de certains bananiers. Des explants à plusieurs bourgeons, obtenus à partir de petits rejets de bananier `Grande naine' (AAA) et de quatre cultivars de plantains (AAB), ont été prélevés puis incisés en croix avant d'être mis en germoir. Le temps nécessaire à l'apparition des premières pousses, le taux de débourrement, le nombre de pousses formées et sevrées, et la durée de formation des pousses jusqu'au sevrage ont été mesurés. Résultats. À l'issue de la première expérience, les bourgeons récupérés 80 j après l'ensemencement des explants ont représenté (4 à 15) fois le nombre de pieds mères utilisés. Ce nombre a cependant varié avec la variété, l'état physiologique et la qualité du matériel initial. Il en a été de même pour le temps de réponse compris entre (3 et 4) semaines et pour le taux de débourrement des bourgeons. À l'issue de la deuxième expérience, des taux de prolifération moyens de (10 à 20) pousses par explant ont été obtenus en (30 à 40) j sur (60 à 70) % des explants de plantains. Au cours de cette même période, un maximum de 25 pousses par explant a été observé chez Bâtard tandis que French clair a pu produire, dans 13 % des cas, entre (28 et 36) pousses par explant. Conclusion. La technique des PIF permet d'induire in vivo une active prolifération de bourgeons sur des fragments de tige de bananiers dans des conditions particulières de température et d'hygrométrie et sans adjonction d'hormones. Elle est facilement utilisable par les planteurs.

Introduction. Concerns about the potentially harmful effects of fungicides on human health and the environment encourage the search for alternative treatments for perishable fruit postharvest disease control. To this end, the potential use of oligochitosan as a natural antifungal compound to control postharvest anthracnose caused by Colletotrichum musae was investigated in banana fruits from the Cavendish group (genome AAA). Materials and methods. The influence of oligochitosan on the growth of C. musae was determined in vitro by micrographic analysis, while its in situ antifungal activity was monitored in banana fruits that were artificially injury-inoculated with C. musae; the activities of several defense-related enzymes were measured. Results and discussion. Oligochitosan at (4 and 8) g·L–1 markedly inhibited radial mycelial growth of C. musae in vitro. The scanning electron micrograph of C. musae treated with oligochitosan at inhibitory concentrations showed distortion and thinning of the hyphal wall and reduction in fungus colony diameter. Dipping banana fruits in oligochitosan solution at (5 to 20) g·L–1 significantly reduced the diameter of the anthracnose lesion, and 20 g oligochitosan·L–1 almost reached the same inhibitory effect as 0.5 g·L–1 of Sportak®, a synthetic fungicide. Activities of defense-related enzymes such as phenylalanine ammonia-lyase (PAL), β-1, 3-glucanase (GLU) and chitinase (CHT), but not polyphenol oxidase (PPO), increased in banana fruits treated with 0.5 g oligochitosan·L–1. Conclusion. The inhibitory effect of oligochitosan on anthracnose development is due to the combination of a direct antifungal effect on the pathogen and an indirect effect, whereby the activities of defense-related enzymes in the banana fruit were enhanced. To control anthracnose in harvested bananas, treatment with oligochitosan above 20 g·L–1 may substitute the use of synthetic fungicide.

Introduction. Losses in West African commercial mango orchards due to fruit fly infestations have exceeded 50% by the middle of the crop season since 2005, resulting in considerable income loss for the growers. Materials and methods. In 2009, weekly monitoring of adult fruit fly species of economic significance was carried out in eight West African countries at 12 sites across five agro-ecological zones: (i) Humid Forest, (ii) Guinean savanna, (iii) Southern Sudan, (iv) Northern Sudan, and (v) Sahelian. Trapping was performed using methyl eugenol and terpinyl acetate in 288 Tephri-traps, targeting Bactrocera invadens and Ceratitis cosyra. Results. The data showed that B. invadens was present throughout the year in the Forest zone, abundant for 7 months, with a peak in May at the end of the mango season, C. cosyra being totally absent. In the Guinean savanna zone, B. invadens was abundant for 6-7 months, with a peak at the beginning of June coinciding with the season, with a few C. cosyra. In the Southern Sudan zone, B. invadens was abundant for 6 months, with a peak in mid-June during the season, C. cosyra peaking in April. In the Northern Sudan zone, B. invadens was abundant for 5 months, with a peak at the end of June at the end of the season, C. cosyra peaking in May. In the Sahelian zone, B. invadens was abundant for 4 months, peaking in August during the season, C. cosyra peaking just before. These preliminary results showed that the exotic species, B. invadens, was present at high levels [mean peak of 378 flies per trap per day (FTD)] in all agro-ecological zones, while the native species, C. cosyra, preferred the drier zones of West Africa, with lower population levels (mean peak of 77 FTD). Conclusion. Detection trapping of male flies with parapheromones is a useful indicator of field population levels and could be used to deploy control measures (IPM package) in a timely manner when the Economic Injury Level is reached. Control strategies for these quarantine mango fruit fly species are discussed with respect to agro-ecological zones and the phenological stages of the mango tree.

Introduction. Leaf area is often related to plant growth, development, physiology and yield. Many non-destructive models have been proposed for leaf area estimation of several plant genotypes, demonstrating that leaf length, leaf width and leaf area are closely correlated. Thus, the objective of our study was to develop a reliable model for leaf area estimation from linear measurements of leaf dimensions for citrus genotypes. Materials and methods. Leaves of citrus genotypes were harvested, and their dimensions (length, width and area) were measured. Values of leaf area were regressed against length, width, the square of length, the square of width and the product (length × width). The most accurate equations, either linear or second-order polynomial, were regressed again with a new data set; then the most reliable equation was defined. Results and discussion. The first analysis showed that the variables length, width and the square of length gave better results in second-order polynomial equations, while the linear equations were more suitable and accurate when the width and the product (length × width) were used. When these equations were regressed with the new data set, the coefficient of determination (R2) and the agreement index ‘d’ were higher for the one that used the variable product (length × width), while the Mean Absolute Percentage Error was lower. Conclusion. The product of the simple leaf dimensions (length × width) can provide a reliable and simple non-destructive model for leaf area estimation across citrus genotypes.

Introduction. Plum cv. SantaRosa shows climacteric behaviour and grows profitably under sub-temperateconditions in India. After ripening, it has a very limited shelflife (3–4 days) in ambient conditions [(38 ± 2) °C and at (68 ± 4)%RH]. Hence, there is an urgent need to extend its marketabilityusing recent techniques. Materials and methods. Plumswere harvested at the pre-climacteric and climacteric stages ofmaturity and packed with newspaper shreds (control), KMnO4-impregnatedchalks, KMnO4-impregnated newspaper shreds or ethylene-absorbent sachets;then they were transported by road to New Delhi. The biochemicaland physiological analyses were carried out at 3-day intervals onplums stored in supermarket conditions [(20 ± 1) °C and at (90 ± 2)%RH] for 15 days. Results and discussion. Untreatedfruits had less firmness than those which were packed with ethyleneabsorbents. The activities of fruit-softening enzymes such as lipoxygenase(LOX), polygalacturonase (PG) and pectin methylesterase (PME) increasedrapidly in the control treatment in comparison with plums packed withvarious ethylene absorbents, the least being either with ethylene-absorbentsachets or with KMnO4-impregnated newspaper shreds. Plums of pre-climacteric andclimacteric maturity attained respiration and ethylene evolutionpeaks on the 9th day and 6th day, respectively. Conclusions. Theplums of pre-climacteric and climacteric stages of maturity packed withethylene-absorbent sachets showed the best results in supermarketconditions in maintaining the firmness, quality and shelf life ofplum up to the 12th day and 9th day of storage, respectively.

Introduction. Canada is an important avocado importer from Mexico. For most of the harvest season, fruit reach adequate pulp dry matter content, ripen properly and, consequently, quality and shelf life are excellent. However, after January, fruit dry matter content increases and blackened skin occurs. Shipments to Canada containing blackened fruit are rejected because this characteristic is wrongly associated with low pulp firmness and short shelf life. The objective of our research was to determine the effect of harvest time and ripening degree on initial quality and shelf life of Hass avocado. Materials and methods. Fruit were harvested from October 2007 to April 2008, and grouped into five ripening categories according to the degree of blackened skin. Fruit were then refrigerated for 7 d to simulate shipment to Canada. Thereafter, fruit were stored under simulated market conditions until they reached the edible ripening stage. Dry matter content was calculated only at the beginning of the storage period while quantification of weight loss, fruit with blackened skin, pulp firmness, and pulp color was done at the beginning of the storage period, at the end of the refrigeration period, and every three days during market conditions. Results and discussion. Dry matter content, skin color and pulp hue angle significantly increased with harvest date and ripening degree. Weight loss decreased with harvest date but increased with ripening degree, while firmness was affected by harvest date but was not associated with ripening degree. Conclusion. There is no reason to reject or downgrade blackened fruit, since quality and shelf life are not affected.

Origin and importance. Acerola, or Malpighia emarginata D.C., is native to the Caribbean islands, Central America and the Amazonian region. More recently, it has been introduced in subtropical areas (Asia, India and South America). The vitamin C produced by acerola is better absorbed by the human organism than synthetic ascorbic acid. Exportation of acerola crops is a potential alternative source of income in agricultural businesses. In Brazil, the commercial farming of acerola is quite recent. Climatic conditions. Acerola is a rustic plant. It can resist temperatures close to 0 °C, but it is well adapted to temperatures around 26 °C with rainfall between (1200 and 1600) mm per year. Fruit characteristics. Acerola fruit is drupaceous, whose form can vary from round to conic. When ripe, it can be red, purple or yellow. The fruit weight varies between (3 and 16) g. Maturation. Acerola fruit presents fast metabolic activity and its maturation occurs rapidly. When commercialised in ambient conditions, it requires fast transportation or the use of refrigerated containers to retard its respiration and metabolism partially. Production and productivity. Flowering and fruiting are typically in cycles associated with rain. Usually, they take place in 25-day cycles, up to 8 times per year. The plant can be propagated by cuttings, grafting or seedlings. Harvest. Fruits produced for markets needs to be harvested at its optimal maturation stage. For distant markets, they need to be packed in boxes and piled up in low layers; transportation should be done in refrigerated trucks in relatively high humid conditions. Biochemical constituents. Acerola is the most important natural source of vitamin C [(1000 to 4500) mg·100–1 g of pulp], but it is also rich in pectin and pectolytic enzymes, carotenoids, plant fibre, vitamin B, thiamin, riboflavin, niacin, proteins and mineral salts. It has also shown active anti-fungal properties. Products and market. Acerola is used in the production of juice, soft drinks, gums and liqueurs. The USA and Europe are great potential markets. In Europe, acerola extracts are used to enrich pear or apple juices. In the USA, they are used in the pharmaceutical industry. Conclusions. The demand for acerola has increased significantly in recent years because of the relevance of vitamin C in human health, coupled with the use of ascorbic acid as an antioxidant in food and feed. Acerola fruit contains other significant components, which are likely to lead to a further increase in its production and trade all over the world.

Introduction. The heat treatments applied to vanilla beans (Vanilla planifolia G. Jackson) during processing have various objectives, which include encouraging the hydrolysis of the glucosylated precursors of the aroma components by one (or several) endogenous glucosidase(s). The glucosides of the vanilla bean. Fifteen glucosides have been identified in the green fruit, of which glucovanillin is the most abundant. It can reach concentrations of up to 15% of fruit dry matter about 30 weeks after pollination, and represents the main form of accumulation of vanillin. β-D-glucosidase(s) of the vanilla bean. A β-D-glucosidase from the vanilla bean was purified and characterised. However, several glucosidases may exist and have yet to be studied. The glucosidase activity seems to be very unstable during the heat treatments. This raises questions about the process of glucoside hydrolysis during vanilla curing. Compartmentation between the glucosidase activity and glucosides in the vanilla bean. After various debates, it now appears that glucovanillin and glucosidase activity largely occur in the bean’s placental region. Their respective cellular localisation has yet to be determined. However, numerous elements support the hypothesis that enzymatic hydrolysis is regulated by a cellular compartmentation that differs between enzyme and substrate. Conclusion. A great deal of research work still needs to be conducted on the glucosides and glucosidase(s) of the vanilla bean. It would be particularly interesting to further our understanding of what occurs during the enzymatic hydrolysis of aroma precursors during curing.

Introduction. Notre étude a eu pour objectif de comparer la production fruitière des karités de parcs agroforestiers à celle d’arbres présents dans les formations naturelles. Matériel et méthodes. La production fruitière de karités a été évaluée à l’aide d’un inventaire systématique effectué en 2002 sur trois transects établis à cheval sur deux types de peuplements : un parc agroforestier et une formation naturelle. Cet inventaire a permis de prélever dix fruits par arbre, qui ont été mesurés et pesés. Le rendement en amandes sèches a été évalué sur la production de deux lots de 25 arbres localisés l’un dans un parc agroforestier et l’autre dans une formation naturelle. Résultats. Nos résultats ont montré que 94 % des arbres des parcs agroforestiers avaient fructifié pendant la période d’étude contre 56 % des arbres présents dans les formations naturelles. Le rendement moyen en amandes des arbres des parcs, d’environ 4 kg·arbre–1, a été statistiquement supérieur à celui des arbres des formations naturelles (1,5 kg·arbre–1 environ). Il en a été de même pour les longueurs moyennes (3,7 cm contre 2,9 cm) et les largeurs moyennes (3,0 cm contre 2,3 cm) des fruits des arbres analysés dans l’un et l’autre des deux types de peuplements échantillonnés. Le poids moyen d’une amande sèche des arbres des parcs agroforestiers, de 4,5 g environ, a différé significativement de celui des arbres des formations naturelles (2,6 g). Discussion et conclusion. Les karités des parcs agroforestiers peuvent donc être considérés comme des « arbres-plus » par rapport à ceux des formations naturelles.
