Traditionally, nuts have been considered a staple food, but because of their high energy and fat content are not considered good for body weight control or insulin sensitivity. Frequent consumption of nuts reduces the risk of coronary artery disease and type-2 diabetes and nut-enriched diets favourably alter blood lipids in normal and hypercholesterolemic individuals under controlled and free-living dietary conditions. However, whether or not frequent consumption of nuts can cause weight gain and impair insulin sensitivity is not fully understood. Review of the available data to date suggests that adding nuts to habitual diets of free-living individuals does not cause weight gain. In fact, nuts have a tendency to lower body weight and fat mass. In the context of calorie-restricted diets, adding nuts produces a more lasting and greater magnitude of weight loss among obese subjects while improving insulin sensitivity. Further studies are needed to clarify the effect of long-term (≥ year) consumption of nuts on body weight and their role in altering insulin sensitivity both in normal and type-2 diabetics. In the meantime, there is sufficient evidence to promote the inclusion of nuts as part of healthy diets.

Phytosterols contain an unsaturated ring structure and therefore are susceptible to oxidation under certain conditions. Whilst the cytotoxicity of the analogous cholesterol oxidation products (COP) has been well documented, the biological effects of phytosterol oxidation products (POP)have not yet been fully ascertained. The objective of the present study was to examine the cytotoxicity of β-sitosterol oxides and their corresponding COP in a human monocytic cell line (U937), a colonic adenocarcinoma cell line (CaCo-2) and a hepatoma liver cell line (HepG2). 7β-Hydroxysitosterol, 7-ketositosterol, sitosterol-3β,5α,6β-triol and a sitosterol-5α,6α-epoxide–sitosterol-5β,6β-epoxide (6:1) mixture were found to be cytotoxic to all three cell lines employed; the mode of cell death was by apoptosis in the U937 cell line and necrosis in the CaCo-2 and HepG2 cells. 7β-Hydroxysitosterol was the only β-sitosterol oxide to cause depletion in glutathione, indicating that POP-induced apoptosis may not be dependent on the generation of an oxidative stress. A further objective of this study was to assess the ability of the antioxidants α-tocopherol, γ-tocopherol and β-carotene to modulate POP-induced cytotoxicity in U937 cells. Whilst α/γ-tocopherol protected against 7β-hydroxycholesterol-induced apoptosis, they did not confer protection against 7β-hydroxysitosterol-or 7-ketositosterol-induced toxicity, indicating that perhaps COP provoke different apoptotic pathways than POP. β-Carotene did not protect against COP- or POP-induced toxicity. In general, results indicate that POP have qualitatively similar toxic effects to COP. However, higher concentrations of POP are required to elicit comparable levels of toxicity.

Based on the potential benefits to long-term human health there is interest in developing sustainable nutritional strategies for reducing saturated and increasing specific unsaturated fatty acids in ruminant milk. The impact of plant oil supplements to diets containing different forages on caprine milk fatty acid composition was examined in two experiments using twenty-seven Alpine goats in replicated 3 × 3 Latin squares with 28 d experimental periods. Treatments comprised of no oil (control) or 130 g/d of sunflower-seed oil (SO) or linseed oil (LO) supplements added to diets based on grass hay (H; experiment 1) or maize silage (M; experiment 2). Milk fat content was enhanced (P < 0·01) on HSO, HLO and MLO compared with the corresponding H or M control diets, resulting in 17, 15 and 14 % increases in milk fat secretion, respectively. For both experiments, plant oils decreased (P < 0·05) milk 10 : 0–16 : 0 and odd- and branched-chain fatty acid content and increased 18 : 0, trans-Δ6–9,11–14,16-18 : 1 (and their corresponding Δ-9 desaturase products), trans-7, trans-9-conjugated linoleic acid (CLA), trans-9, trans-11-CLA and trans-8, cis-10-CLA concentrations. Alterations in the distribution of cis-18 : 1, trans-18 : 1, -18 : 2 and CLA isomers in milk fat were related to plant oil composition and forage in the diet. In conclusion, plant oils represent an effective strategy for altering the fatty acid composition of caprine milk, with evidence that the basal diet is an important determinant of ruminal unsaturated fatty acid metabolism in the goat.

The purpose of the present study was to evaluate the capacity of the‘Determine Your Nutritional Health’ Checklist (NSI Checklist) and the ‘Mini Nutritional Assessment’ (MNA) methods to predict nutrition-related health problems. Data were from the Danish part of the ‘Survey in Europe of Nutrition in the Elderly, a Concerted Action’ (SENECA) baseline survey from 1988, and the follow-up study from 1993. Based on the baseline survey thirty-nine (19.3 %) of the subjects were classified at high nutritional risk, 103 (51 %) were considered at moderate nutritional risk and sixty (29.7 %) were within the ‘good’ range according to the criteria in the NSI Checklist. With the MNA, 171 subjects were classified according to their nutritional risk into a well-nourished group, comprising 78.4 %, and a group who were at risk of undernutrition, comprising 21·6 % at baseline. A total of 115 subjects participated in the follow-up study. The mortality rate and the prevalence of various morbidity indicators were compared between the different risk groups. The analysis showed that subjects with a high MNA score (≥ 24) had significantly lower mortality (rate ratio estimate: 0.35; 95 % Cl 0.18, 0.66) compared with subjects with a low MNA score (≤ 23.5). In contrast, the NSI Checklist score was not a significant predictor of mortality (rate ratio estimate: 1.45; 95 % Cl 0.78, 2.71). The sixteen Danes judged to be at high nutritional risk by the NSI Checklist in 1988, had more acute diseases (P < 0.001) than the rest of the participants, between 1988 and 1993. No significant differences were found in the participation rates, hospitalization rates, physician visits, need of help or weight loss between the groups. The thirteen Danes judged to be at risk of undernutrition in 1988 by the MNA, had a lower participation rate (P < 0.01) and higher occurrence of acute disease (P < 0.05), need of help (P < 0.05), and weight loss (P < 0.001) than the well-nourished group, between 1988 and 1993. No significant differences were found in hospitalization rates and physician visits between the two groups. In conclusion, the results indicate that modified versions of the NSI Checklist and the MNA are capable of identifying a group of 70–75-year-old subjects with increased risk of certain nutrition-related health problems. Further, an MNA score ≤ 23.5 predicts mortality in a Danish population.

1. Three heifers were changed from a diet of equal parts of hay and barley cubes (50:50 diet) to one entirely of barley cubes given in three equal feeds throughout the day. Feed intake was restricted to 80% of calculated appetite at the time of change and this percentage progressively decreased as the live weights of the animals increased.

2. The change of diet had no significant effect on the volume of rumen fluid but the rate of outflow from the rumen was significantly lower on the barley diet than on the 50:50 diet.

3. Animals on the restricted barley diet developed an exceptionally high rumen ciliate population and the bacterial population was shown by Gram films to include a number of organisms typical of roughage-fed animals. In culture, organisms of the genus Bacteroides were predominant but these appeared largely as cocco-bacilli in the Gram films. This microbial population was associated with a higher proportion of butyric acid than of propionic acid in the rumen fluid.

4. Occasional fluctuations in ciliate populations occurred in all three heifers. Decreases in ciliate number were paralleled by increases in propionic acid and decreases in butyric acid but not necessarily by a fall in pH. Under these conditions Gram films showed increases in bacteriodes-type rods and in certain curved Gram-negative rods.

5. Rumen ammonia concentrations were on average lower and showed a different diurnal pattern when ciliate numbers were reduced. Lactic acid concentrations were low and were not affected by the size of the ciliate population.

6. When the three heifers were given the barley diet ad lib. there was a decrease in rumen pH and a complete loss of rumen ciliates. The rumen bacterial population and the volatile fatty acid proportions were similar to those seen during decreases in ciliate number at the restricted level of intake. These changes also occurred in a fourth heifer which was changed fairly rapidly from the 50:50 diet to a restricted amount of the barley diet.

7. Two steers which had never had access to roughage were changed from ad lib. to restricted intake of the barley diet and were later given an inoculum of rumen ciliates. The rumen microbial population and the pattern of fermentation so produced were similar to those found in the heifers on the restricted barley diet.

8. Anomalous values were noted for total counts of rumen bacteria when free starch grains were present in the rumen fluid.

9. It is concluded that large ciliate populations and high proportions of butyric acid can be produced in animals fed exclusively on a barley diet by suitable adjustment of the intake and the method of feeding. It is postulated that the ciliate population may be largely responsible for the high butyric acid concentrations.

1. Eight groups each of four castrated male pigs, 25–30 kg initial body-weight, were kept for periods of 3 weeks in a calorimeter equipped as a pig pen and maintained at either 8° or 20°. At each temperature two feeding levels (g food/kg body-weight per d) were used, 45 and 52 at 8°, and 39 and 45 at 20°. Metabolizable energy, heat loss and nitrogen balance were measured.

2. Heat loss was higher at 8° than at 20° and was independent of plane of nutrition, whereas at 20° the higher heat loss occurred at the higher plane of nutrition. Energy retention depended on both temperature and feeding level, and was highest at the 52 g feeding level at 8°.

3. N retention was not influenced by environmental temperature but varied with plane of nutrition (correlation coefficient = 0·94), the increase being 9·98 (± 0·8) mg N per g food increase. The correlation coefficient between N retention and body-weight gain was also 0·94; body-weight gain was correlated with N retention rather than with fat deposition. Fat gain was reduced at the lower feeding levels and at the lower environmental temperature at the feeding level of 45 g/kg.

4. The partial efficiency of energy retention at 20° was 66·5%. From this efficiency the maintenance requirement (at zero energy retention) at 20° was calculated to be 418 kJ/kg0·75. At 8° the partial efficiency of energy retention was 99·4%.

1. Twelve steers fitted with rumen cannulas were used in three separate experiments to investigate the effects of the presence or absence of rumen ciliate protozoa on methane production. The diet consisted of 850 g barley and 150 g protein supplement/kg, and was given in three feeds daily at a restricted level of 61 g/kg live weight0.75. Animals were defaunated initially by allowing ad lib. consumption of this diet and were then maintained ciliate-free by isolation or were faunated by inoculation with a mixed ciliate suspension. Samples of rumen fluid were taken routinely for the assessment of microbial populations and for volatile fatty acid (VFA) analysis and energy and nitrogen balances and digestibility measurements were made at intervals while animals were confined in respiration chambers.

2. In each experiment the rumen VFA proportions changed from a high-propionate pattern under ciliate-free conditions to a low-propionate, high-butyrate pattern in the presence of ciliates: differences between treatments were highly significant (P < 0.001). There were also marked differences between treatments in CH, production but a reliable comparison was possible only in Expt 3, in which CH4 was significantly higher (P < 0.001) in the presence of a rumen ciliate population. In Expt 3 the increased loss of energy as CH4 in the faunated animals amounted to 44 MJ/100 MJ energy intake.

3. Stoichiometric estimates of CH4 production derived from the observed VFA proportions showed good agreement with CH4 production as measured in respiration chambers. On average, the stoichiometric CH4 values overestimated CH4 production by a factor of 1.08.

4. Highly significant linear relationships (P < 0.001) were observed between the molar proportion of each major VFA and the quantity of CH4 produced: the proportion of propionic acid was inversely related to CH4 and showed the lowest residual standard deviation of all the relationships examined.

5. The losses of energy in faeces and urine did not differ between treatments hence the increased loss of energy as CH4 in the faunated animals resulted in a significant reduction in the metabolizability of the diet from 0.73 to 0.69 (P < 0.05). No significant differences were detected between treatments in heat production, apparent digestibility coefficients or N balance.

6. It is suggested that the rumen ciliates, by modifying the rumen VFA proportions, are directly responsible for the increased CH4 production in faunated animals.

1. In seven experiments sheep were given diets ranging from all-hay to all-barley, and also a diet comprising one part hay to two parts flaked maize. Each sheep was equipped with a cannula into the rumen and a re-entrant cannula in the proximal duodenum; six of the ten also had a re-entrant cannula in the terminal ileum. Paper impregnated with chromic oxide (Cr2O3) was given twice daily by rumen fistula.

2. Amounts of α-linked glucose polymer entering and leaving the small intestine and excreted in the faeces were measured. Some values for a fraction designated non-glucose reducing polymer for cellulose and for gross energy were also obtained. The amounts passing the proximal duodenum and the terminal ileum were adjusted to give 100% recovery of Cr2O3 and the values were used to measure the extent of digestion in various parts of the alimentary tract.

3. When rolled or whole barley was given alone or was the major feed constituent the amount of α-linked glucose polymer entering the small intestine was 6.0±0.76% of that ingested (range 2.6–8.1%). The value was significantly lower than that found for the diet of hay and flaked maize (10.4±1.3%, range 8.0–13.6 %).The α-linked glucose polymer which entered the small intestine was almost completely digested there.

4. The digestibility of the non-glucose reducing polymer, which included much of the hemicelluloses present, ranged from 51 to 73% and almost all the digestible fraction (93–97%) was digested before the small intestine when hay or predominantly hay diets were given. On high-cereal diets only 71–85% of the digested fraction disappeared before the small intestine and appreciable amounts were digested in the large intestine.

5. On the all-hay diet 91% of the digestible cellulose and 67% of the digestible energy were lost before the small intestine, 0 and 21% in the small intestine and 9 and 12% in the large intestine.

6. Mean digestibility coefficients determined in sheep fed solely on either whole or rolled barley were: for dry matter 88.1 and 87.9%, for nitrogen 83.5 and 82.1%, for crude fibre 53.7 and 56.6% and for gross energy 87.7 and 88.0%.

The dietary flavonoid epicatechin has been reported to exhibit a wide range of biological activities. The objective of the present study was to investigate the time-dependent regulation by epicatechin on the activity of the main transcription factors (NF-κB, activator protein-1 (AP-1) and nuclear transcription factor erythroid 2p45-related factor (Nrf2)) related to antioxidant defence and survival and proliferation pathways in HepG2 cells. Treatment of cells with 10 μm-epicatechin induced the NF-κB pathway in a time-dependent manner characterised by increased levels of IκB kinase (IKK) and phosphorylated inhibitor of κB subunit-α (p-IκBα) and proteolytic degradation of IκB, which was consistent with an up-regulation of the NF-κB-binding activity. Time-dependent activation of the AP-1 pathway, in concert with enhanced c-Jun nuclear levels and induction of Nrf2 translocation and phosphorylation were also demonstrated. Additionally, epicatechin-induced NF-κB and Nrf2 were connected to reactive oxygen species intracellular levels and to the activation of cell survival and proliferation pathways, being phosphatidylinositol-3-kinase/protein kinase B (PI3K/AKT) and extracellular regulated kinase (ERK) associated to Nrf2 modulation and ERK to NF-κB induction. These data suggest that the epicatechin-induced survival effect occurs by the induction of redox-sensitive transcription factors through a tight regulation of survival and proliferation pathways.

Few prospective studies have examined the effects of different types of dairy food on the risks of type 2 diabetes, CHD and mortality. We examined whether intakes of total dairy, high-fat dairy, low-fat dairy, milk and fermented dairy products were related to these outcomes in the Whitehall II prospective cohort study. At baseline, dairy consumption was assessed by FFQ among 4526 subjects (72 % men) with a mean age 56 (sd 6) years. Death certificates and medical records were used to ascertain CHD mortality and non-fatal myocardial infarction. Incident diabetes was detected by the oral glucose tolerance test or self-report. Incidence data were analysed using Cox proportional hazards models, adjusted for lifestyle and dietary factors. During approximately 10 years of follow-up, 273 diabetes, 323 CHD and 237 all-cause mortality cases occurred. In multivariable models, intakes of total dairy and types of dairy products were not significantly associated with incident diabetes or CHD (all P values for trend >0·1). Fermented dairy products was inversely associated with overall mortality (hazard ratios approximately 0·7 in the middle and highest tertiles; P for trend < 0·01) but not with incident CHD or diabetes (P>0·3). In conclusion, intakes of total dairy and types of dairy products showed no consistent relationship with incident diabetes, CHD or all-cause mortality.

Epidemiological studies have demonstrated inconsistent associations between tea consumption and mortality of all cancers, CVD and all causes. To obtain quantitative overall estimates, we conducted a dose–response meta-analysis of prospective cohort studies. A literature search in PubMed and Embase up to April 2015 was conducted for all relevant papers published. Random-effects models were used to calculate pooled relative risks (RR) with 95 % CI. In eighteen prospective studies, there were 12 221, 11 306 and 55 528 deaths from all cancers, CVD and all causes, respectively. For all cancer mortality, the summary RR for the highest v. lowest category of green tea and black tea consumption were 1·06 (95 % CI 0·98, 1·15) and 0·79 (95 % CI 0·65, 0·97), respectively. For CVD mortality, the summary RR for the highest v. lowest category of green tea and black tea consumption were 0·67 (95 % CI 0·46, 0·96) and 0·88 (95 % CI 0·77, 1·01), respectively. For all-cause mortality, the summary RR for the highest v. lowest category of green tea and black tea consumption were 0·80 (95 % CI 0·68, 0·93) and 0·90 (95 % CI 0·83, 0·98), respectively. The dose–response analysis indicated that one cup per d increment of green tea consumption was associated with 5 % lower risk of CVD mortality and with 4 % lower risk of all-cause mortality. Green tea consumption was significantly inversely associated with CVD and all-cause mortality, whereas black tea consumption was significantly inversely associated with all cancer and all-cause mortality.

Tomatoes are the richest source of lycopene, a potent antioxidant. Tomato products improve antioxidant defences and reduce the risk of inflammatory diseases, at least partly, due to the presence of lycopene. Lycopene, as an anti-inflammatory agent, prevents the production of inflammatory cytokines. Obesity is a chronic inflammatory condition in which the increased level of body fat leads to an increase in circulating inflammatory mediators. We hypothesised that the consumption of a lycopene-rich food would reduce inflammation in people who are overweight or obese. A total of 106 overweight or obese female students of the Tehran University of Medical Sciences were enrolled and randomly allocated to an intervention group (n 53) or a control group (n 53) consuming 330 ml/d of tomato juice or water, respectively, for 20 d. At baseline and day 20, serum concentrations of IL-6, IL-8, high-sensitivity C-reactive protein and TNF-α were analysed by ELISA and compared between the groups. Serum concentrations of IL-8 and TNF-α decreased significantly in the intervention group compared with the control group and with baseline. Subgroup analysis indicated that this effect was confined to subjects who were overweight. Among obese subjects, serum IL-6 concentration was decreased in the intervention group compared with the control group, with no differences in IL-8 and TNF-α observed. Tomato juice reduces inflammation in overweight and obese females. Thus, increasing tomato intake may provide a useful approach for reducing the risk of inflammatory diseases such as CVD and diabetes, which are associated with obesity.

Breast-feeding is the predominant postnatal transmission route for HIV-1 infection in children. However, a majority of breast-fed infants do not become HIV-infected despite continuous exposure to the virus through their mothers' milk over many months. What protects some breast-fed infants from HIV-1 infection? HIV-1 entry across the infant's mucosal barrier is partially mediated through binding of the HIV-1 surface glycoprotein gp120 to dendritic cell-specific ICAM3-grabbing non-integrin (DC-SIGN) on human dendritic cells. Lewis antigen glycans, present in human milk, bind to DC-SIGN and inhibit HIV-1 transfer to CD4+T lymphocytes. Human milk contains a high amount of unbound, complex oligosaccharides (5–10 g/l) that carry one or more Lewis antigen glycans, and we hypothesized that they compete with gp120 for DC-SIGN binding. Here, we show in two independent assays that physiological concentrations of human milk oligosaccharides significantly reduce gp120 binding to DC-SIGN by more than 80 %. These results may provide an additional explanation for the inhibitory effects of human milk on HIV-1 mother-to-child-transmission. Identifying the specific milk oligosaccharides that interact with DC-SIGN may guide the development of glycan-based drugs that prevent transmission of HIV-1 and other pathogens that use DC-SIGN as an entry point. However, blocking DC-SIGN may be a two-edged sword.

The objective of the present study was to evaluate the effects of the Pro Children intervention on schoolchildren's fruit and vegetable (FV) intake after 1 and 2 years of follow-up. The intervention combined a FV curriculum with efforts to improve FV availability at schools and at home. Effects were examined in a group-randomised trial among 1472 10–11-year-old children from sixty-two schools in Norway, the Netherlands and Spain. FV intake was assessed by means of validated self-administered questionnaires completed before the intervention (September 2003), immediately after the first year of the intervention (May 2004) and 1 year later (May 2005). Data were analysed using multilevel linear regression analyses with age and sex as covariates. Significant intervention effects for FV intake were found at first follow-up in the total sample. The adjusted FV intake reported by the children from intervention schools was 20 % higher than FV intake reported by children from control schools. At 1 year later, a significant impact was only observed in Norway. Positive intervention effects on FV intake occurred both at school and outside school. We conclude that the Pro Children intervention is a promising means to promote European schoolchildren's FV intakes, but mainly fruit intake, in the short term. As shown in Norway, where the intervention was best implemented, the intervention might also result in longer-term effects. Further strategies need to be developed that can improve implementation, have an impact on vegetable intake and can secure sustained effects.

Pulses (dry beans, peas, lentils) are nutrient-dense foods that are recommended as good choices in either the vegetable or meat and alternative food groups in Canada's Food Guide. To examine the prevalence and the effect of pulse consumption on nutrient intake in Canadian adults ( ≥ 19 years), we analysed cross-sectional data (n 20 156) from the 2004 Canadian Community Health Survey, Cycle 2·2. Participants were divided into non-consumers and quartiles of pulse intake. Sample weights were applied and logistic regression analysis was used to explore the association of nutrient intakes and pulse consumption, with cultural background, sex, age and economic status included as covariates. On any given day, 13 % of Canadians consume pulses, with the highest consumption in the Asian population. The pulse intake of consumers in the highest quartile was 294 (se 40) g/d and, compared with non-consumers, these individuals had higher intakes of carbohydrate, fibre and protein. As well, the micronutrient intake of pulse consumers was enhanced, resulting in fewer individuals who were below the estimated average requirement for thiamin, vitamin B6, folate, Fe, Mg, P and Zn, compared with non-consumers. Although pulses are generally low in Na, its intake also was higher in pulse consumers. Among the higher quartiles of pulse consumers, fruit and vegetable intake was one serving higher. These data indicate that pulse consumption supports dietary advice that pulses be included in healthful diets. Further studies elucidating the sources of increased Na in pulse consumers will be necessary so that dietary advice to increase consumption of pulses will maximise their nutritional benefits.

1. Semi-synthetic diets containing 200 g protein/kg were meal-fed for 1.5 h to groups of rats. The contents of the whole small intestinal tract were collected and the amount of soluble calcium was determined.

2. In the rats given 200 g casein/kg diet, formation of a fraction containing macrophosphopeptide in the small intestine was confirmed by gelfiltration of the intestinal contents on Sephadex G-25. However, this macrophosphopeptide fraction was not found when casein alone was fed.

3. In the intestinal contents at 2.5 h after ingestion, the amounts of both soluble Ca and phosphorus were significantly higher in rats fed the casein diet than in those fed diets containing egg albumin, isolated soyabean protein or an amino acid mixture. However, the amount of insoluble Ca was least in rats fed the casein diet.

The nutritional manipulation of the diets of laying hens to include sources of n–3 fatty acids promotes the deposition of these nutrients into egg yolk. n–3 Fatty acid-rich eggs may provide an exciting alternative food source for enhancing consumer intake of these proposed healthful fatty acids. Care must be taken when designing n–3 fatty acid-rich poultry rations, however, to assure that the resulting egg fatty acid profile is useful for promoting consumer health yet maintaining egg sensory quality. In study 1 laying hens were fed on diets supplemented with graded levels of menhaden oil (MO), rich in both eicosapentaenoic acid (EPA; 20:5n–3) and docosahexaenoic acid (DHA; 22: 6n–3), for 4 weeks to determine maximal yolk fatty acid deposition attainable without sensory compromise. Yolk fatty acids were analysed for an additional 4 weeks, post-MO removal, to investigate yolk n–3 fatty acid tenacity. Dietary MO levels between 15 and 30g/kg yielded the greatest yolk n–3 fatty acid content; however, only eggs from birds fed with 15g MO/kg were considered acceptable by trained flavour panelists. Evaluation of eggs from hens fed with 15g MO/kg during storage verified that the shelf-life of enriched eggs was comparable with that of typical eggs. In study 2, graded levels of whole or ground flaxseed were used for the deposition of linolenic acid (LNA; 18:3n–3) and to determine in vivo production of DHA from dietary LNA for yolk deposition. Flaxseed form influenced yolk n–3 fatty acids only when given at 150 g/kg diet. In vivo production of DHA, while significant, was not enhanced by increasing the level of dietary flaxseed nor by grinding the seed. In the third study, a DHA-rich natural marine alga (MA) was investigated as an n–3 fatty acid supplement. Despite similar DHA profiles, dietary MA was found to be more efficient for yolk DHA deposition than dietary MO. These studies suggest that there are numerous viable n–3 fatty acid supplements for poultry rations. It must be realized, however, that the fatty acid profile of the final product varies substantially depending on which supplement is fed.

High intake of fish has been associated with reduced risk of CHD. The high content of n-3 polyunsaturated fatty acids (PUFA) in fish has been suggested to be a protective factor. In addition, fish is the entirely dominating source of methylmercury for the general population, and the concentration of Hg in erythrocytes (Ery-Hg) is often used as an index of fish consumption. Our aim was to study the relationships between a first-ever myocardial infarction, Ery-Hg, activity of gluthathione peroxidase in erythrocytes (Ery-GSH-Px) and plasma concentration of the n-3 PUFA eicosapentaenoic and docosahexaenoic acids (P-PUFA). In a population-based prospective nested case–control study within Northern Sweden seventy-eight cases of a first-ever myocardial infarction were compared with 156 controls with respect to Ery-Hg, P-PUFA and Ery-GSH-Px. Both Ery-Hg and P-PUFA, but not Ery-GSH-Px, were significantly (P<0·0001) higher in subjects reporting high fish intake (at least one meal per week) than in those with lower intake. This finding suggests that Ery-Hg and P-PUFA reflect previous long-term fish intake. Low risk of myocardial infarction was associated with high Ery-Hg or high P-PUFA. In a multivariate model the risk of myocardial infarction was further reduced in subjects with both high Ery-Hg and high P-PUFA (odds ratio 0·16, 95 % CI 0·04, 0·65). In conclusion, there is a strong inverse association between the risk of a first myocardial infarction and the biomarkers of fish intake, Ery-Hg and P-PUFA, and this association is independent of traditional risk factors.

The present study investigated whether storage under modified-atmosphere packaging (MAP) affected the antioxidant properties of fresh lettuce (Lactuca sativa). Eleven healthy volunteers (six men, five women) consumed 250 g fresh lettuce, and blood was sampled before (0 h) and 2, 3 and 6 h after consumption. The protocol was repeated 3 d later with the same lettuce stored at 5°C under MAP conditions (O2–N2 (5:95, v/v)). Results showed that after ingestion of fresh lettuce, plasma total radical-trapping antioxidant potential (TRAP), measured as area under the curve, was significantly higher (1·3 (SEM 0·3) MMOL/L PER 6 H; P<0·05) THAN THE VALUE OBTAINED WITH MAP-STORED LETTUCE (0·1 (sem 0·2) mmol/l per 6 h). Plasma TRAP, quercetin and p-coumaric acid were significantly different from baseline values (P≤0·05) 2 and 3 h after fresh lettuce ingestion. Caffeic acid increased significantly at 3 h (P<0·05). Plasma β-carotene levels increased significantly at 6 h (P<0·05). Vitamin C concentrations (mg/l) rose from 10·9 (sem 2·0) to 12·7 (sem 3·0) (P<0·001), 12·7 (sem 2·0) (P<0·01) and 12·9 (sem 3·0) (P<0·05) at 0, 2, 3 and 6 h respectively. No changes were observed after ingestion of MAP-stored lettuce for all the measured markers. Our present results showed that ingestion of MAP-stored lettuce does not modify plasma redox status in healthy subjects. Further research is needed to develop post-harvesting techniques able to preserve the bioactive molecule content of plant food.
