This article explores the spatial politics of Peru’s gastronomic revolution and corresponding efforts to territorialize Peruvian agricultural products by tracing the spatial dynamics of quinoa’s trajectory from highland dietary staple to coveted national food. Efforts to codify Peru’s national cuisine have involved mapping ingredients and dishes onto specific regions while dramatically reshaping agricultural production geographies and culinary topographies. Because of quinoa’s success as a high-value export crop, the Peruvian altiplano is no longer perceived as a landscape useful exclusively for livestock pasture and mining. Instead, it is imagined as agriculturally productive: the country’s quinoa heartland. At the same time, quinoa’s trajectory illuminates spatial contradictions in the gastronomic boom’s purported objectives and its tangible effects. The revalorization of quinoa led to a geographical expansion of its production outside the high Andes, undermining the spatially bound concepts of authenticity promoted by gastronomic leaders in Peru. Broadly, efforts to commercialize marginalized food products and their corresponding regions can at once reconfigure territorial discourses in important ways, reinforce long-standing geographical inequalities, and generate contestations of the geographic imaginaries of food and nation.

The Tiwanaku civilization (around AD 500–1100) originated in the Bolivian altiplano of the south-central Andes and established agrarian colonies (AD 600–1100) in the Peruvian coastal valleys. Current dietary investigations at Tiwanaku colonial sites focus on maize, a coastal valley cultivar with ritual and political significance. Here, we examine Tiwanaku provincial foodways and ask to what degree the Tiwanaku settlers maintained their culinary and agrarian traditions as they migrated into the lower-altitude coastal valleys to farm the land. We analyze archaeobotanical remains from the Tiwanaku site of Cerro San Antonio (600 m asl) in the Locumba Valley and compare them to data from the Tiwanaku site in the altiplano and the Rio Muerto site in the Moquegua Valley during the period of state expansion. Our findings show high proportions of wild, weedy, and domesticated Amaranthaceae cultivars, suggesting that Tiwanaku colonists grew traditional high-valley (2,000–3,000 m asl) and altiplano (3,000–4,000 m asl) foods on the lowland frontier because of their established cultural dietary preferences and Amaranthaceae's ability to adapt to various agroclimatic and edaphic conditions.

In Chile, two quinoa ecotypes are grown: salares, also present in the highlands of Bolivia, and coastal, in central and southern areas of the country, at sea level. Genotypes from the coastal ecotype have characteristics that differentiate them from the most popular quinoa genotypes grown in the Andean Region of South America. The objectives of this study were: (1) to determine the cardinal temperatures for seed germination in quinoa genotypes from coastal and salares ecotypes cultivated in Chile, and (2) to study the presence of physiological dormancy (PD) in these genotypes. Seed germination from nine quinoa genotypes, two from salares and seven from coastal ecotypes, was evaluated in a gradient of temperatures between 11 and 42°C. Germination was also evaluated at 20°C at 0, 7 and 15 months from harvest. Results showed that seed from the nine genotypes germinated at their maximum percentage between 11 and 35°C. However, their faster germination occurred between 25 and 35°C. There was a significant difference between optimum temperature for germination between genotypes from coastal (28°C) and salares (30°C). An increase in germination rates after 7 months of storage suggested the presence of a non-deep PD in seeds from coastal ecotype, which may be useful to improve pre-harvest sprouting resistance in quinoa breeding programmes.

Quinoa (Chenopodium quinoa Willd) is a dicotyledonous annual species belonging to the family Amaranthaceae, which is nutritionally well balanced in terms of its oil, protein and carbohydrate content. Targeting-induced local lesions in genomes (the TILLING strategy) was employed to find mutations in acetolactate synthase (AHAS) genes in a mutant quinoa population. The AHAS genes were targeted because they are common enzyme target sites for five herbicide groups. Ethyl methane sulfonate (EMS) was used to induce mutations in the AHAS genes; it was found that 2% EMS allowed a mutation frequency of one mutation every 203 kilobases to be established. In the mutant population created, a screening strategy using pre-selection phenotypic data and next-generation sequencing (NGS) allowed identification of a mutation that alters the amino acid composition of this species (nucleotide 1231 codon GTT→ATT, Val→Ile); however, this mutation did not result in herbicide resistance. The current work shows that TILLING combined with the high-throughput of NGS technologies and an overlapping pool design provides an efficient and economical method for detecting induced mutations in pools of individuals.

The objective of this study was to evaluate the effect of day length after flowering on pollen tube elongation, embryo formation and seed development. The quinoa varieties used in this study were Amarilla de Marangani (valley type) and NL-6 (sea-level type). After sowing, the quinoa plants were cultivated in growth cabinets. From sowing to flowering, plants were exposed to a 15 h day length regime. After flowering, the plants were grown under either a 15 h or 11 h day length regime. The elongation of the pollen tube and the formation of the early embryo were not inhibited in either Amarilla de Marangani or NL-6 under the 11 or 15 h day length regimes. Although growth of the embryo in NL-6 was not inhibited by the 15 h day length regime after flowering, the same was not observed in the case for Amarilla de Marangani. In Amarilla de Marangani, seed diameter at 8 and 14 days after flowering under the 11 h day length regime was larger than that of seeds grown under the 15 h day length regime. Thus, the decrease in the number of seeds in Amarilla de Marangani grown under the 15 h day length regime may be caused by the suspension of embryo growth after fertilization.

Huauzontle (Chenopodium berlandieri ssp. nuttalliae) is a locally important vegetable crop native to the highland valleys of Central Mexico and a potential source of genes for improving its Andean sister crop, quinoa (Chenopodium quinoa). A previous work involving two huauzontle lines identified one waxy genotype that lacked amylose due to mutations in granule-bound starch synthase I (GBSSI), major amylose-synthesis genes with two constituent subgenomes, A and B. We conducted this study to determine the extent of waxy genotypes and cryptic GBSSI mutations in 11 huauzontle accessions or landrace populations extending from Puebla in the southeast to Jalisco in the northwest. This represents one of the first published studies of genetic variation in C. berlandieri ssp. nuttalliae. Accessions were phenotyped for opaque versus translucent seed morphology and their seed starches were stained with Lugol's Stain. In addition, complete or partial GBSSI genes from their A and B genomes were polymerase chain reaction (PCR)-amplified, cloned and sequenced. Seven accessions were either wholly or partially non-waxy while six were either entirely or partially waxy. All waxy accessions carried the same putatively null alleles, designated gbssIa-tp (A-genome) and gbssIb-del (B-genome). The identification of publicly available genotypes carrying gbssIa-tp and their potential use in breeding waxy grain quinoa is discussed.

Internationally, there is political impetus towards providing incentive mechanisms, such as payments for ecosystem services (PES), that motivate land users to conserve that which benefits wider society by creating an exchange value for conservation services. PES may incorporate a number of conservation goals other than just maximizing the area under a certain land use, so as to optimize multiple benefits from environmental conservation. Environmental additionality (conservation services generated relative to no intervention) and social equity aspects (here an equitable distribution of conservation funds) of PES depend on the conservation goals underlying the cost-effective targeting of conservation payments, which remains to be adequately explored in the PES literature. This paper attempts to evaluate whether multiple conservation goals can be optimized, in addition to social equity, when paying for the on-farm conservation of neglected crop varieties (landraces), so as to generate agrobiodiversity conservation services. Case studies based on a conservation auction in the Bolivian and Peruvian Andes (through which community-based groups identified the conservation area and the number of farmers taking part in conservation, as well as the payment required), identified significant cost-effectiveness tradeoffs between alternative agrobiodiversity conservation goals. There appears to be a non-complementary relationship between maximizing conservation area under specific landraces (a proxy for genetic diversity maintenance) and the number of farmers conserving such landraces (a proxy for agricultural knowledge and cultural traditions maintenance). Neither of the two are closely connected with maximizing the number of targeted farming communities (a proxy for informal seed exchange networks and hence geneflow maintenance). Optimizing cost-effectiveness with regard to conservation area or number of farmers would also be associated with a highly unequal distribution of payments. Multi-criteria targeting approaches can reach compromise solutions, but frameworks for these are still to be established and scientifically informed about the underlying link between alternative conservation goals and conservation service provision.
