The role of the primary phase of rennin action in the coagulation of cow's milk

Summary

The rennin coagulation time of cow's milk was inversely proportional to the amount of glycopeptides released by rennin action on the milk and to the initial velocity of the release of the glycopeptides. It was shown that the rennin coagulation of milk is largely determined by the primary phase of rennin action and, therefore, by the amount of κ-casein that is susceptible to attack by rennin.
