Earlier papers have set the background to the meat market in terms of consumer demand and retailing structure. My role is to assess how these factors will influence the processing and production industry in setting up and achieving its objectives. This will include defining more exactly, for pigmeat, what the needs of the industry are and what changes are likely over the next few years.
