One hundred and twenty-four young rabbits of the Giant of Spain breed (mature weight, 4 to 4·5 kg) were slaughtered in groups at birth, 10, 20, 30, 40, 50 and 60 days of age.

Energy retention over the six 10-day periods was 10·7, 26·5, 39·0, 48·9, 72·6 and 57·3 kcal/day, energy content per unit of weight increase was 5·18, 5·52, 5·52, 5·47, 5·80 and 5·89 kcal/g, and deposition of protein (N×6×25) was 1×45, 3×09, 4×28, 5×56, 7×31 and 5×44 g/day. The regression of the energy content of the empty body (kcal) on empty-body weight (g) was:

with a coefficient of regression of 0·97.

The aim of the investigation was to evaluate the specific effect, if any, of grass protein on the birth weight of lambs born to ewes wintered indoors. Grass meal was used as a substitute for fresh grass, and soya bean meal—representing a more conventional source of protein for winter diets—was compared with it. Both sources of protein were included at two levels, providing a high (90 g or 0·2 lb/day) and a low (45 g or 0·1 lb/day) intake of digestible crude protein.

The digestibility of dry matter was significantly higher for the diets containing soya bean meal (67·7%) than for those containing grass meal (58·2%). Dry-matter digestibility was not affected by level of protein intake. The digestibility of crude protein was significantly affected by protein source and level of intake.

Lamb birth weights were not significantly affected by source or level of dietary protein. There was a tendency for birth weights to be higher on the diet containing grass meal at low protein intakes. Ewe weight gains during the last eight weeks of gestation were significantly affected by level of dietary protein, and net body weight change was significantly affected by both source and level of protein. Gestation treatments had no effect on the performance of ewes or lambs during the first three weeks of lactation.

The retention of nitrogen during the 18th–20th weeks of gestation was affected by both source and level of dietary protein. Mean nitrogen retention was higher with diets containing soya bean meal (5·8 g per day) than with diets containing grass meal (3·6 g per day). There was no correlation between nitrogen retention and lamb birth weight.

Forty-eight 1-day-old pigs were used to compare lactose and glucose as the carbohydrate source for piglets from 1 to 22 days of age. Average daily gains, gain over feed ratios and the apparent digestion coefficients for crude protein, ether extract, nitrogen-free extract, ash, energy and dry matter were similar for the two groups. Apparent net protein utilization was greater with the glucose diet than with the lactose diet (P<0·05), although their apparent biological values and metabolizable energy values were similar. The serum levels of total glucose, total protein and urea nitrogen were also similar for both groups. Serum levels of total protein and urea nitrogen declined with age while the trend for total glucose was inconsistent. Subsequent nursery performance from 22 to 64 days of age when all pigs were fed the same diet was not influenced by the previous neonatal dietary treatment.

The value of a selection index for 8-week litter weight as a trait of the ewe, combining information on the ewe and on five classes of female relatives, was considered. Adding records on the dam and on paternal half sibs to those of the ewe gives increases of 10 to 50% in the rates of genetic response. The index can be simplified with little loss in efficiency by weighting all records equally for relatives with 1, 2 or more records within each class of relative. In selecting breeding replacements, information on the parents of the sire of the individual being selected may increase the rates of response by a further 20 to 30 %.

The hypothesis is proposed that pigs will induce a mechanical stress, by huddling and over-lying, that is related to the degree of thermal stress experienced. Measurements of the floor area covered by groups of 12 pigs have been used to validate the hypothesis.

In two experiments the growth, body composition and behaviour of steers and heifers kept in a building with natural day length only (average 9·7 h/day, treatment N) were compared with similar groups of animals kept in identical housing with the day length artificially extended to 16 h/day, (treatment L). The effects were recorded for 126 days in steers and 180 days in heifers, with both groups of animals being slaughtered in March when the two experiments ended. There were no effects over the entire experiment on the growth rate or food intake of either steers or heifers. The growth of the steers was reduced in the first 2 weeks after the lights were switched on but they gained more weight to compensate over the next 8 weeks. Over the whole experiment there was no treatment effect on food conversion ratio for either steers or heifers but it was reduced for steers on treatment L over the first 10 weeks. Steers in treatment N produced fatter carcasses than those on treatment L. Ultrasonic scanning of the heifers showed that those on treatment N deposited more fatty tissue between autumn and winter and less between winter and spring compared with those on treatment L.

The behaviour of steers on treatment L did not vary over the experiment but steers on treatment N changed their behaviour with season. They slept for more time in winter and less in spring. Over the whole experiment steers on treatment L slept less and spent more time lying ruminating than those on treatment N but the total time spent lying was not affected by treatment. In contrast, the heifers on treatment L lay down for longer than those on treatment N, suggesting that the effect of supplementary light on lying time, which has been observed previously with dairy cows, is confined to female cattle. Heifers on treatment L started mounting each other earlier than heifers on treatment N and, like the steers, they spent less time sleeping It is concluded that extending the photoperiod for cattle in winter reduced body fatness in both steers and heifers and increased the time heifers spend lying down but that there were no major effects on growth rate or food intake.

Fall-calving multiparous Angus × Hereford cows 3 to 10 years of age were stratified by age in a three by two factorial treatment arrangement to evaluate the efficacy of modifying stocking rate and supplementation strategy to manage cow body condition and production parameters over a 5-year study. Efficacy was evaluated quarterly in association with calving, breeding, weaning, and mid way between weaning and calving (i.e. in August). Three protein supplementation strategies (none, standard, strategic) were imposed across both a moderate (0·3 cows per ha) and a high (0·4 cows per ha) stocking rate. In the strategically supplemented group, protein supplement was provided to cows with a body condition score <5·5 at the quarterly evaluations. There was an effect of supplementation on pregnancy rate, which in combination with previously established culling practices resulted in different age profiles amongst supplementation strategies in years 2 to 5 (P < 0·01). Two statistical analyses were therefore conducted to dissociate the confounding effects of supplementation strategy and age. One model included the effect of stocking rate, supplementation strategy, production year, and all interactions; the second included the addition of age and its interactive effects. Stocking rate and supplementation strategy affected pregnancy rate in each of the models (P = 0·003 and P = 0·10, respectively). Standard, non-supplemented and strategically supplemented animals had estimated pregnancy rates of 0·83, 0·76, and 0·79, respectively (P = 0·10). The effects of nutrition on both calving interval and birth weight were independent of the model employed. Animals that were not supplemented had extended calving intervals (P = 0·06), but there was no effect of stocking rate (P > 0·10). Birth weight was not affected by supplementation strategy or stocking rate (P > 0·10). The lower 205-day weights of calves on a heavy compared with moderate stocking rate was independent of age (P = 0·02). However, the increased 205-day weight of calves born to strategically supplemented cows compared with those born to unsupplemented cows was only evident when data were not corrected for differences in age among groups (P = 0·03). Likewise, analyses of cow condition parameters using models without and with age resulted in different interpretations. These results suggest that strategic and standard supplementation result in similar animal performance and that the improvement in herd productivity associated with altering stocking rate and supplementation may partially be due to altered herd age dynamics.

The positive effect of administration of growth hormone (GH) on milk production and its presence in selected dairy cattle lines of higher GH concentrations prompted an examination of the presence of restriction fragment length polymorphism (RFLP) in the growth hormone gene using the enzyme Taq/ and to investigate associations between this polymorphism and milk production traits. Blood was sampled from 251 Italian Holstein-Friesian cows. Three fragment bands, arbitrarily denoted A, B and E, of 6·2, 5·2 and 1·9 kilobase (kb), respectively, were observed. Their combinations exhibited six patterns, AA, AB, ABE, AE, BB and BE with frequencies of 64·5, 24·3, 2·4, 6·8, 1·4 and 0·4%, respectively. The statistical analysis was performed using linear mixed animal models. The results indicated an effect of the GHgene polymorphic Taq/restriction fragment on 305-day productions of milk, fat and protein; the low frequency pattern AE showed productions inferior to those for AA or AB patterns. Effect estimates of AA, AB and AE were, respectively, 200 (s.e. 215), 218 (s.e. 267) and -910 (s.e. 380) kg for milk production, 7·75 (s.e. 7·98), 16·10 (s.e. 9·79) and -22·14 (s.e. 14·42) kg for fat production, and 6·78 (s.e. 6·21), 8·57 (s.e. 7·58) and -20·74 (s.e. 11·14) kg for protein production. The average substitution effect estimates of E were -891 (s.e. 278), -26·56 (s.e. 10·16) and -24·50 (s.e. 9·43) kg for milk, fat and protein yields, respectively. In conclusion, these results suggest that the E fragment deserves further designed and specific study.

In two experiments the effect of giving concentrates to dairy cows from a fully-controlled out-of-parlour dispenser was compared with giving concentrates twice daily in the milking parlour. In experiment 1, 22 cows were used in a cross-over design during the first 19 weeks of lactation. In experiment 2, 34 cows were used in a continuous trial during the first 18 weeks of lactation. Weeks 1 to 3 of each experiment were used as a standardization period during which all cows were given equal amounts of concentrates twice a day during milking. At the end of this period cows were paired and assigned to receive concentrates either in the milking parlour (group P) or to receive 1·0 kg concentrates per day in the milking parlour and the remainder from an out-of-parlour dispenser (group O). Within pairs, between treatments, cows were offered the same amount of concentrates and allowed access to ad libitum silage. Means for milk yield, fat and solids-not-fat concentrations during experiment 1 were 25·1 v. 23·9 kg/day (P < 0·01), 36·5 v. 38·1 g/kg, 89·9 v. 89·1 g/kg (P < 0·001), and for experiment 2 were 27·1 v. 25·4 kg/day (P < 0·01), 39·8 v. 42·6 g/kg, and 90·9 v. 90·9 g/kg, for groups O and P respectively. Mean concentrate intakes during experiment 1 were 8·3 v. 8·4 kg/day (P < 0·01) and during experiment 2 were 8·9 v. 8·6 kg/day (P < 0·01) for groups O and P respectively. In both experiments, group O had more positive changes in weight and body condition score (P < 0·05). It is concluded that the use of the dispenser improved milk yield, weight and condition-score changes, though milk fat concentration was decreased compared to that of parlour-fed cows.

Four groups of eight lambs (four male + four female) of about 25 kg live weight were given a concentrate diet which was supplemented with either calcium (Ca) or Ca and phosphorus (P). The levels of Ca and P in the diets were set in relation to estimated requirements (R) as determined by the Technical Committee on Response to Nutrients (TCORN, 1990) and the four treatments were as follows: treatment A Ca and P = 1R; treatment B Ca = 2R P = 1R; treatment C Ca = 4R P = 1R; treatment D Ca = 4R P = 2R.

At about 50 kg live weight the lambs were slaughtered and their body composition was determined.

The composition of their gains was also determined using information obtained from a fifth group of lambs killed at the start of the trial. There were significant treatment effects in relation to body mineral composition with Ca and P levels being higher in lambs on treatments C and D compared with those on treatments A and B. Magnesium levels were also higher in lambs on treatment D. Lambs on treatments A and B grew at the same rate (0·t25 kg/day) and retained Ca and P in relation to live-weight gain at rates close to those on which TCORN (1990) based their estimates of requirements. Lambs on treatments C and D, however, retained these minerals at somewhat higher rates though this improvement in mineralization was accompanied by a slight reduction in growth rate and in some lambs on these treatments there were health problems due to the formation of kidney stones.

The levels of Ca and P recommended by TCORN (1990) for lambs are adequate for normal growth and mineralization. Some improvement in mineralization may be achieved by feeding these minerals at above recommended levels but this improvement would appear to be at the expense of a reduction in growth rate and an increased risk of urolith formation.

Forty-eight Greyface wether lambs, aged about 6 months and weighing 32 kg on average were used. They were allocated to be treated, by subcutaneous implantation in the upper surface of the ear flap, with the naturally occurring steroids oestradiol-17β (O), testosterone (T) or the synthetically produced androgen trenbolone acetate (TA). Treatment groups were as follows: sham-implanted controls (C); 50 mg O (slow release formulation) (O); 40 mg TA (compressed pellets} (TA); 50 mg T (compressed pellets) (T); 15 mg O + 40 mg TA (TAO); 15 mg O + 50 mg T (TO). Combined implants were placed in close proximity under the skin of the same ear. The lambs were offered, to appetite, a good quality diet containing per kg dry matter (DM) an estimated 12-0 MJ metabolizable energy and 150 g crude protein. Comparisons were made for the main effects of O and the androgens T and TA. Main effects due to O were increased DM intake, live-weight gain (LWG) empty body weight (EBW), chilled carcass iveight (CCW), carcass crude protein (CP) deposition, plasma insulin concentrations and teat length with reductions recorded for the proportion but not weight of fat in the carcass, plasma urea and thyroxine concentrations. Treatment with androgens did not, on average, influence LWG or other indices of growth performance or carcass composition other than to produce significant increases in carcass phosphorus deposition and reduction in the depth of thorax. Significant increases in the iveight of penile tissue and reductions in teat length were recorded. There was evidence for a greater androgenic effect on penile tissue and anti-oestrogenic effect (on teat length) of TA compared with T at the concentrations used. TA also reduced the weight of the thymus gland, an effect reversed in the presence ofO.

Analysis of plasma taken from the vein contralateral to the site of implantation showed that O concentrations were reduced in the presence of TA and T, and that O had no effect on the concentrations of androgens measured. Concentrations ofT and 17 β-hydroxy-trenbolone in blood were of a similar order, which for T is typical of postpubertal entire male sheep.

The results suggest that O treatment was effective in promoting growth and carcass CP deposition which was not increased by T or TA, despite the presence of these androgens at biologically active concentrations in blood. This effect appears to differ from the additive effects frequently obtained for castrated male cattle.

Theoretical rates of genetic response are calculated for adult multiple ovulation and embryo transfer (MOET) nucleus breeding schemes and conventional breeding systems in dairy cattle. For a single trait breeding objective, the relative responses with MOET schemes decline as the heritability falls and the number of progeny in the progeny test scheme increases. Selection for an aggregate breeding objective of milk yield and another trait, for different values of heritability, correlation and relative economic importance, is also examined. Generally, the overall response of efficient MOET schemes exceeds the progress of an efficient conventional breeding scheme with 50 to 100 daughters per bull. Only if the relative economic weight for the lowly heritable trait exceeds 0·60 and the progeny test is on 200 offspring are conventional systems superior. Testing additional paternal half-sib groups from a MOET scheme gives a considerable extra response, especially when lowly heritable traits have a dominating economic importance.

Female reproductive performance over four parities was studied for lines of mice selected for one three criteria: appetite (A), total lean mass (P), or proportion of fat (F). Female mice were first bred 8 weeks of age, and thereafter at intervals of about 7 weeks until fourth parity when they were dissected in late pregnancy to measure components of litter size.

The high A lines had higher litter sizes at the first three parities and higher ovulation rates, numbers of implantation sites and live foetuses at the fourth parity than the low A lines. The high P lines were also higher than the low P lines for each of these traits. In contrast, litter sizes and ovulation rates differed little between the high and low F lines. Fitting body weight as a covariate removed the high-low differences in ovulation rate and litter size between the P lines, but not all the differences between the A lines.

Pre-implantation survival at the fourth parity was slightly lower in the high than in low A and in high than in low P lines. Differences in post-implantation survival were very small. No component of prenatal survival differed substantially at fourth parity between the high and low F lines.

Differences in fertility at each parity and the percentages of females surviving to the end of the study were small. At each litter, dams of the high A lines produced heavier total weights of litters at 12 and 21 days than dams of the low A lines and the corresponding high-low differences in the P lines were larger. There were only small differences in these traits between the F lines. When litter size, fertility and survival were summed over parities, the average total number of young produced per female was substantially higher in the high than in the low A lines (5·0 young born alive or dead) and the P lines (7·2), but the high-low difference was small in the F lines (2-0). For all lines, litter size at first parity gave a reliable indication of reproductive rate during a major portion of the reproductive lifespan.

1. Groups of 12 male and 12 female lambs, early weaned and individually fed, were used at six centres in Great Britain to determine the effect of dietary protein concentration on growth rate and feed utilization from weaning to 37 kg live weight. Three diets varying in the proportion of rolled barley to white-fish meal were used to give 13·5, 16·0 or 18·5% crude protein in the dry matter. The diets were pelleted and offered ad libitum.

2. The male lambs showed significantly poorer growth rates and feed conversions on the low-protein than on the other diets. Results for the females were more variable so that although the mean values showed similar trends these were not statistically significant.

3. Female lambs had about 19% lower growth rates than male lambs. The mean food conversion (kg dry matter/kg gain) with the diet containing 16% crude protein was 2·67 for the males and 3·30 for the female lambs. Food utilization differed significantly between centres, the centres using lambs of Finn Dorset breeding having lower growth rates and poorer food utilization than Suffolk crosses.

This exploratory holo-analysis of the efficacy of Bio-Mos®, (BM), an outer cell wall derivative of a strain of Saccharomyces cerevisiae, is part of an empirical modelling research programme comparing the efficacies of potential replacements for veterinary prescription-free pronutrient antibiotics in pig production. The data resource was mined from 128 saccharide publications of which 31/97 on BM (1997 to 2003) provided 69 negatively controlled start-to-finish tests from 10 countries (USA 71%) using 3778 pigs(30·5 per treatment). Respective food intake, live-weight gain and food conversion responses of 0·0075 kg/day (0·99%), 0·0145 kg/day (3·58%) and −0·0526 (3·07%) have coefficients of variation of 511, 163 and 229% and beneficial gain and conversion frequencies of 73 and 68%, 54% jointly. Holo-analytical multiple regression models of BM food intake, live-weight gain and food conversion effects using conventional and less stringent probabilities contain significant independent variables for negative control performances, dosage, discontinuous dosage, test duration, year of test, non-USA test, male, grower-finisher, slatted floor, processed food, antibacterial foods, animal protein food, main vegetable protein not soya bean, added oil/fat food and factorial data, which account for 11 to 68% of variations in response. The models quantify differences in research and praxis and indicate areas for future modelling research on BM dose-response relations, effects of ration ingredient and nutrient contents, other saccharide efficacy comparisons, including lactose, and BM comparisons and interactions with other proposed antibiotic replacements.

The objective of the study was to assess the usefulness of providing shade for beef cows grazing summer dry Mediterranean -pasture and supplemented with a food high in non-protein nitrogen (poultry litter). Two groups of 30 cows each, in the last trimester of pregnancy, were placed on 1 June in two paddocks of similar grazing pressure, topography, vegetation cover and botanical composition. In one of the sub-units the cows had free access to a large shaded area, provided by 10 to 12 large eucalyptus trees, whereas in the second sub-unit, access to shade was denied until 31 August. Respiration rate, used as an index of heat stress, was much higher in the non-shaded cows (102 breaths per min) than in the cows with access to shade (62 breaths per min). In response to the much higher heat stress in the non-shaded cows, total body water and haematocrit value (an index of plasma volume) were higher than in the cows with access to shade. Metabolizable energy (ME) intake was apparently much lower in the non-shaded cows, as reflected in a much higher non-esterified fatty acid concentration in plasma. Consequently, large differences in live weight gradually developed during the course of the trial, the cows with access to shade becoming much heavier than those with no access to shade. An increase in the consumption of poultry litter by the non-shaded cows was interpreted as an effort to reduce internal heat load by avoiding grazing and by preferring food which induces a lower heat increment upon ingestion and digestion. Above-normal serum concentrations of cholesterol and alkaline phosphatase support previous results that the combination of low ME intake and high ammonia load induces a toxic effect on the liver. Although all the cows were pregnant at the onset of the study, successful parturition was recorded in 26 of the 30 cows having access to shade, and in only 20 of the 30 (F < 0·05 by t test) of the non-shaded cows. It is concluded that providing shade for beef cows under summer Mediterranean conditions will reduce the danger of embryonic loss. However, an interaction with metabolic burden, such as ammonia load and a negative energy balance, can make the situation much worse.

Many studies have shown that metabolic efficiency of ruminants can be significantly decreased when B-vitamin supply is insufficient. Under the present state of knowledge, the amounts of B vitamins available for intestinal absorption cannot be predicted based on diet composition. Therefore, in an attempt to increase our understanding of the effects of dietary factors, on B-vitamin supply for dairy cows, the effects of increasing amounts of extruded linseed in diets based on hay (permanent grassland hay, H; Experiment 1) or corn silage (CS; Experiment 2) on apparent ruminal synthesis (ARS) of thiamin, riboflavin, niacin, vitamin B6, folates and vitamin B12 were evaluated. In each experiment, four lactating Holstein cows fitted with cannulas in the rumen and the proximal duodenum were used in a 4 × 4 Latin square design. In both experiments, the dietary treatments consisted of an increasing supply of extruded linseed representing 0%, 5%, 10% or 15% of diet DM. The forage : concentrate ratios were 50 : 50 and 60 : 40 for Experiments 1 and 2, respectively. Duodenal flow was determined using YbCl3 as a marker. The ARS of each B vitamin was calculated as duodenal flow – daily intake. In both experiments, treatments did not affect thiamin, riboflavin, niacin and vitamin B12 duodenal flow or ARS. Increasing the dietary concentration of extruded linseed decreased folate intake in Experiment 1 and vitamin B6 intake in Experiment 2 but resulted in a greater duodenal flow of vitamin B6 and folates regardless of the forage used in basal diet. Greater dietary linseed concentrations decreased vitamin B6 apparent degradation in the rumen in CS-based diet only and increased folate ARS in both H- and CS-based diets. Increasing linseed concentration of isonitrogenous and isoenergetic diets increased vitamin B6 and folate supply to dairy cows, both with H- and CS-based diets.

In the Inner Mongolian steppe, China, sheep generally graze during daytime and are kept in yards overnight. Hence, nutrients are not returned to the grassland, which might reduce its long-term productivity. Furthermore, the restricted grazing time may limit forage intake and thus the performance of sheep. The aim of this study was therefore to evaluate the impact of continuous 24-h grazing (CG) v. the common daytime grazing (DG) on herbage mass (HM), feed quality, feed organic matter intake (OMI) and live weight gain (LWG) of sheep in the Inner Mongolian steppe. Experiments were carried out from July to September, between 2005 and 2007 on two 2-ha plots per grazing treatment. Each month, the external faecal marker titanium dioxide (TiO2) was orally administered to six sheep per plot on 10 consecutive days. Faecal grab samples were obtained from day 6 to 10 and analysed for CP concentrations to estimate digestibility of organic matter (dOM). Faecal TiO2 concentrations were used to determine the total faecal output and hence OMI of sheep. Concomitant to faeces collection, HM and quality, as well as LWG of the animals were measured. HM and herbage quality did not differ between treatments. However, as the season progressed, concentrations of NDF, ADF and ADL increased, whereas HM and CP concentrations declined. HM and herbage quality parameters differed between years according to the annual precipitation. dOM was similar in CG (0.577) and DG (0.572) sheep, but it decreased from July (0.583) to September (0.558) and differed between years. Accordingly, the OMI of sheep was similar for both treatments across the entire grazing season and all study years. Although mean LWG differed between months and years, it was identical in CG (101.5 g/day) and DG sheep (101.8 g/day). Additional time on pasture during night does not increase feed intake or animal performance. Positive effects of a nutrient reflux on grassland productivity and herbage quality when animals remained on the plots overnight were not found, most likely because of the fact that sheep crowded together in one corner of the plots during darkness and faecal and urinary excretions were thus not evenly distributed across the entire pasture. Considering the risk of animal theft as well as the importance of sheep manure as fuel, the common penning of sheep at night seems to be an adequate management practice for pastoralists in the Inner Mongolian steppe.

According to present acts and regulations, farmed foxes shall have a gnawing or other enrichment object in their cages. However, research on the welfare effects of gnawing objects has been scarce. We assessed physiology and health, that is weight development, urinary cortisol-creatinine ratio, serum cortisol level after adrenocorticotropic hormone administration, internal organ masses and incidence of gastric ulcerations as well as dental and overall oral health, in pair-housed juvenile blue foxes that were housed either with or without a possibility to interact with bones (cattle femur) during their growing season (July to December). The results show that the physiological effects of the possibility to interact with bones were either non-significant or suggested that competition for bones may jeopardize the welfare of subordinate individuals. However, the results clearly show that gnawing bones are beneficial for the dental health of farmed foxes.

Colonization of the gastrointestinal tract of cattle by Shiga toxin-producing Escherichia coli increases the risk of contamination of food products at slaughter. Our study aimed to shed more light on the mechanisms used by E. coli O157:H7 to thrive and compete with other bacteria in the gastrointestinal tract of cattle. We evaluated, in vitro, bovine intestinal mucus and its constituents in terms of their capacity to support growth of E. coli O157:H7 in presence or absence of fecal inoculum, with and without various enzymes. Growth of E. coli O157:H7 and total anaerobic bacteria were proportionate to the amount of mucus added as substrate. Growth of E. coli O157:H7 was similar for small and large intestinal mucus as substrate, and was partially inhibited with addition of fecal inoculum to cultures, presumably due to competition from other organisms. Whole mucus stimulated growth to the greatest degree compared with other compounds evaluated, but the pathogen was capable of utilizing all substrates to some extent. Addition of enzymes to cultures failed to impact growth of E. coli O157:H7 except for neuraminidase, which resulted in greater growth of E. coli O157 when combined with sialic acid as substrate. In conclusion, E. coli O157 has capacity to utilize small or large intestinal mucus, and growth is greatest with whole mucus compared with individual mucus components. There are two possible explanations for these findings (i) multiple substrates are needed to optimize growth, or alternatively, (ii) a component of mucus not evaluated in this experiment is a key ingredient for optimal growth of E. coli O157:H7.
