A note on sex differences in muscle properties of pigs with special emphasis on colour

Investigations of measurable properties of pig muscle have been carried out in many countries (Scheper, 1962). This note describes the effect of sex on six characteristics of longissimus dorsi muscles, i.e. content of moisture, fat, total nitrogen, expressible moisture, myoglobin, total pigment and colour (light reflectance).
