Consumption of whole milk and related dairy products has decreased considerably as a result of negative aspects associated with the consumption of saturated fats. The main difference between the composition of goat milk and cow milk concerns the composition of the fat, that of goat milk containing a larger proportion of medium-chain triglycerides. The metabolic utilization of these compounds is fundamentally oriented towards their use as sources of energy, and they may even contribute to the synthesis of proteins. This study was carried out, using 40 rats at weaning, in order to determine whether, on the basis of their fat and protein composition, there is any difference between the nutritional utilization of the N and the energy from goat and cow milk. Eight animals were killed on arrival at the laboratory, and the rest were divided into four groups of eight animals and killed at the end of the experiment. Each group was given a different diet: diet 1 contained fat and protein from goat milk; diet 2 had fat from cow milk and protein from goat milk; diet 3 had fat from goat milk and protein from cow milk; diet 4 had fat and protein from cow milk. The animals were allowed to feed ad libitum for 30 d and a balance assay was performed during the final 7 d to determine N and energy utilization. At the same time and by the comparative slaughter method, the protein and fat deposition for each group was established. It was concluded that goat milk protein is more digestible than that of cow milk. Moreover, the metabolic utilization of digestible N was found to be dependent on the sources of both the protein and the fat in the diet; a higher degree of utilization was recorded for the digestible N obtained using diets with protein or fat from goat milk. Consumption of diets with goat milk fat led to a lower level of thermogenesis associated with protein oxidation and a higher one for that associated with fat oxidation, which in turn implied a protein-sparing effect of the goat milk fat. These results should be taken into account when deciding upon the type of goat milk to be used (whole, skim or semi-skim), in accordance with the dairy product to be produced from this milk.

Several microbial interactions involving yeast and lactobacilli have been suggested in fermented products. Co-aggregation between Lactobacillus kefir and yeast Saccharomyces lipolytica isolated from kefir grains was studied by scanning electron microscopy and aggregation assays. Six out of twenty Lb. kefir strains were able to co-aggregate with Sacch. lipolytica CIDCA 812 and showed thermolabile non-covalently bound surface molecules involved in this interaction. Co-aggregation inhibition after Lb. kefir pre-treatment with 5 m-LiCl or 20 g SDS/l showed that bacterial S-layer proteins play an important role in this interaction. Presence of different sugar (mannose, sucrose and fructose) or yeast pre-treatment with sodium periodate inhibited co-aggregation between Lb. kefir and Sacch. lipolytica. Co-aggregating Lb. kefir strains were also able to agglutinate with human red blood cells and they lost this ability after treatment with 5 m-LiCl. These results and the capacity of purified S-layer proteins of Lb. kefir to haemagglutinate, strongly suggest that a lectin-like activity of bacterial surface proteins (S-layer) mediates the aggregation with yeast cells.

This paper uses a Markov chain model to analyse the dynamics in farm-size distribution among the Flemish dairy sector and the impact of quota policy regulation on such changes. The model predicts a decline of 24% in number of farms in 2014 compared with the current situation with a more liberal exchange policy and a decline of 18% with a restricted quota exchange policy. From these Markov chain model results, we analysed the impact of farm-size distribution on eight different milk quality parameters (total bacterial count, somatic cell count, coliform count, freezing point, urea-N, fat content and protein content and penalty-points). In general, larger farms produce higher quality milk than smaller farms, especially with respect to the microbiological parameters (total bacterial count, somatic cell count and coliform count). The change in farm-size distribution from a liberal quota exchange policy would decrease the average total bacterial count by 18·0%, the somatic cell count by 2·1% and the coliform count by 11·0%. The aggregate performance of the other parameters are smaller with improvements in all cases of <1%.

The nutritional distinctiveness of pasture-fed dairy products is mainly influenced by the transfer of specific chemical compounds from the grass to the milk and by their effect on rumen microflora and animal metabolism. Thus, the pasture-fed origin has to be objectively proven, using fast and reproducible analytical methods applied to finished products, in order to protect consumers against potential frauds. In this work, Electronic Nose patterns of Alpine milks produced by cows grazing Trifolium alpinum and Festuca nigrescens pasture types have been examined, in order to test the potential use of this device for routine control analyses of the botanical origin of milk and dairy products. The data have been treated with different multivariate analyses (MANOVA, LDA) and chemometrics (MPLS). The results allow a very good classification of the milks, according to the two treatments. Such results demonstrate that this device could be successfully applied to PDO dairy products food chain as a tool for the determination of their dietary origin.

Plant oils in the diet are known to alter milk fat composition owing to changes in the supply of fatty acid precursors and/or activity of lipogenic enzymes in the mammary gland. Thirteen mid-lactating Alpine goats were used in a 3×3 Latin square design with 28-d periods to evaluate possible mechanisms regulating milk fat synthesis and fatty acid composition on grass hay-based diets containing none (H) or 55 g/kg diet dry matter of sunflower-seed oil (HSO) or linseed oil (HLO). Inclusion of oils in the diet had no effect on milk yield but enhanced (P<0·05) milk fat secretion. Compared with the control, HLO and HSO decreased (P<0·05) C10–C16 secretion and increased (P<0·05) C18 output in milk, responses that were accompanied by reductions in milk fat cis-9 14:1/14:0, cis-9 18:1/18:0 and cis-9, trans-11 18:2/cis-9 18:1 concentration ratios. Plant oil supplements decreased (P<0·05) mammary stearoyl-CoA desaturase (SCD) activity but had no effect on SCD mRNA. Treatments had no effect on glucose-6-phosphate dehydrogenase, malic enzyme and glycerol-3-phosphate dehydrogenase activity, or mRNA abundance and/or activity of lipoprotein lipase, acetyl-CoA carboxylase and fatty acid synthase in mammary, hepatic or adipose tissue. The results provided little support for milk fatty acid secretion responses to HLO and HSO being mediated via changes in mammary, hepatic or adipose mRNA abundance or in the activity of key lipogenic enzymes. In conclusion, plant oils in the diet enhance milk fat synthesis, alter milk fatty acid composition and specifically inhibit mammary SCD activity in the goat. Furthermore, the results suggest that the regulation of mammary lipogenesis in response to plant oils appears related to factors other than altered mammary gene expression or potential lipogenic enzyme activity.

Use of synthetic feed additives, including synthetic vitamin D3 (D3) in the feed for cows and other ruminants, is not consistent with the international principles of organic farming. If dairy farmers wish to produce in accordance with the organic principles, production animals would be left with only their endogenous production of D3 from summer sunlight as a source of D3. To examine the impact of supplemental synthetic D3 from the feed on the D3 status of dairy cattle in organic production in Nordic countries, 20 high-yielding dairy cows and 30 dairy steers were divided into two groups: one supplemented with synthetic D3 in the feed and one not supplemented with synthetic D3. Vitamin D3 status of the animals was assessed by measuring the concentration of the liver-derived 25-hydroxyvitamin D3 (25OHD3) in plasma. Results showed that 25OHD3 concentration in plasma from dairy cattle as well as from steers decreased during winter for both supplemented and unsupplemented groups. Unsupplemented cows and steers had approximately 2 ng 25OHD3 per ml plasma during winter, whereas supplemented animals had between 10 (cows) and 30 (steers) ng/ml. During summer and autumn there was no additive effect of supplementing with synthetic D3 since unsupplemented and supplemented animals had the same D3 status at this time of year. In all cows summer concentrations of 25OHD3 were 20–25 ng/ml and in all steers 40–50 ng/ml plasma. The decrease in vitamin D3 status during winter indicates that cows and steers are able to store D3 only to a limited extent. The results also show that cows or steers fed supplemental D3 according to Swedish recommendation throughout the year are not able to maintain their summer value of 25OHD3 during winter.

The objective was to determine the proportions and bacterial counts of major mastitis pathogens in samples of bulk tank milk (BTM), as well as to clarify the relationship between these bacteria counts and bulk tank somatic cell count (BTSCC). The purpose was to judge the importance of the counts of mammary pathogens for BTSCC at the population level. Samples of BTM were collected from 268 randomly selected anonymous dairy herds (with approximately 29 000 dairy cows). Staphylococcus aureus, other coagulase-positive staphylococci, Streptococcus agalactiae and Streptococcus dysgalactiae were grouped as contagious pathogens, and Streptococcus uberis, Escherichia coli, Pseudomonas aeruginosa, Enterococcus faecalis and Enterococcus faecium as environmental pathogens. Based on assessment of the dominant pathogen in each herd, environmental pathogens were found to dominate. Counts of specific mammary pathogens in BTM samples did not exceed a geometric mean of 1000 cfu/ml. Significant differences were documented in BTSCC between BTM samples containing Str. agalactiae, Staph. aureus, and Str. dysgalactiae and BTM samples that were pathogen-free. Geometric means of BTSCC associated with these pathogens were noticeably higher than the overall BTSCC (Str. agalactiae 243 628; Staph. aureus 205 610; Str. dysgalactiae 203 978; overall 173 000 cells/ml). It follows that the somatic cell count (SCC) associated with these pathogens contributed substantially to the overall BTSCC. Environmental pathogens predominated in samples of BTM with SCC <300×103/ml and contagious mastitis pathogens predominated in BTM samples with SCC >300×103/ml. No correlation was detected between bacterial counts of specific pathogens and BTSCC. This study revealed that the assessment of bacterial counts of mammary pathogens in samples of BTM in relation to BTSCC is applicable for the monitoring of changes in the occurrence of major mastitis pathogens in dairy herds at a national level.

The aim of the work is to evaluate the effects of different forage to concentrate rations on milk yield, composition and renneting properties of milk of Jonica breed goats. Twenty-four Jonica goats received diets with forage to concentrate ratio of 35/65, 50/50 or 65/35, providing respectively a low, medium and high energy level. Goats were divided into three homogenous groups and confined in individual pens for 152 days to assess the daily feed intake and milk yield and composition. The main conclusions show that animal body weight did not change significantly with the increasing levels of forage, whereas significant differences (P<0·05) for daily dry matter intake were observed in relation to the evolution of lactation. Milk production was influenced (P<0·05) by dietary treatments and was higher in the diet with the greatest energy level. Forage to concentrate ratios did not significantly affect milk characteristics, milk renneting properties, initial production, rate of increase until reaching the peak and rate of decline after peak production. However, the day of peak production and peak production of goats were linearly reduced when the level of forage increased within the diet. In conclusion, the results indicate that both forage to concentrate ratio and energy level improve goat's production without influencing the milk composition.

The objective of this study was to develop a mathematical model that accurately describes the rise and decline in plasma progesterone concentrations, and is able to define parameters describing progesterone appearance and disappearance during the bovine oestrous cycle. Daily plasma progesterone data from 27 cows were used to develop a compartmental model consisting of an appearance function and an appearance modulating function. Model outputs included an apparent appearance or secretion duration, appearance rate and an average disappearance rate (expressed as arbitrary units per day; units/d). Shape-based clustering identified three common shape-based groups (or clusters) of progesterone profiles defined as either ‘peaked’ profile, with the profile reaching a distinguishable peak, 'structured', with the profile exhibiting a wave-like pattern, or ‘flat top’, with the profile reaching a plateau. Differences in the model parameters for the three different shapes of progesterone profiles were examined: peaked (n=13), flat top (n=7) and structured (n=7). The mean duration of apparent appearance was 11·49 (sd 0·17 d) for all 27 profiles. The model estimates for total appearance of progesterone (area under the curve; ng/ml per cycle), mean appearance rate and maximum appearance rate were 69·04 ng/ml per cycle (sd 15·2 ng/ml per cycle), 3·19 ng/ml per cycle (sd 0·7 ng/ml per d) and 6·70 ng/ml (sd 1·31 ng/ml), respectively. The average disappearance rate was 1·0 units/d (sd 0·04 units/d). The apparent appearance duration was greatest (P<0·01) in the flat top profiles (12·54, sd 0·41 d) followed by the structured (11·77, sd 0·66 d) and the peaked (10·80, sd 0·30 d) profiles. Total and mean progesterone appearance, maximum progesterone appearance rate, and the progesterone disappearance rates were not different between the profiles. The model successfully simulated all components of the progesterone profile and was able to define specific parameters of different shaped progesterone profiles. A simple model able to estimate parameters describing progesterone appearance and disappearance can be used to explore the relationships between profile shapes and reproductive outcomes.

Angiotensin-I-Converting Enzyme (ACE) inhibitors peptides were produced from unsupplemented acid goat whey fermented aerobically for 168 h by Kluyveromyces marxianus and Lactobacillus rhamnosus. This yeast-lactobacillus association is GRAS. Two novel lactokinins were identified: NYW and W with IC50 of 20 and 0·86 μm respectively. They both were resistant toward simulated gastrointestinal digestion. In addition, WLAHK was found in the hydrolysate. These three sequences belong to f(99–110) of α-la which seems to be a lactokinin cryptic zone. W was the major molecule released by the fermentation process. Considering that W is the precursor of serotonin, the hydrolysate produced could be of interest for the generation of functional health ingredient involved in regulation of affective disorders and hypertension.
