The changes taking place with age in energy turnover of dairy cattle are largely unknown. It is unclear whether the efficiency of energy utilization in digestion (characterized by faecal and methane energy losses) and in metabolism (characterized by urine and heat energy losses) is altered with age. In the present study, energy balance data were obtained from 30 lactating Brown Swiss dairy cows aged between 2 and 10 years, and 12 heifers from 0.5 to 2 years of age. In order to evaluate a possible dependence of age effects on diet type, half of the cattle each originated from two herds kept at the same farm, which were fed either on a forage-only diet or on the same forage diet but complemented with 5 kg/day of concentrate since their first calving. During 2 days, the gaseous exchange of the animals was quantified in open-circuit respiration chambers, followed by an 8-day period of feed, faeces, urine and milk collection. Daily amounts and energy contents were used to calculate complete energy balances. Age and feeding regime effects were analysed by parametric regression analysis where BW, milk yield and hay proportion in forage as consumed were considered as covariates. Relative to intake of gross energy, the availability of metabolizable energy (ME) increased with age. This was not the result of an increasing energy digestibility, but of proportionately lower energy losses with methane (following a curvilinear relationship with the greatest losses in middle-aged cows) and urine (continuously declining). The efficiency of utilization of ME for milk production (kl) increased with age. Potential reasons include an increase in the propionate-to-acetate ratio in the rumen because of a shift away from fibre degradation and methane formation as well as lower urine energy losses. The greater kl allowed older cows to accrete more energy reserves in the body. As expected, offering concentrate enhanced digestibility, metabolizability and metabolic utilization of energy. Age and feeding regime did not interact significantly. In conclusion, older cows seem to have digestive and metabolic strategies to use dietary energy to a certain degree more efficiently than younger cows.

Consumption of whole milk and related dairy products has decreased considerably as a result of negative aspects associated with the consumption of saturated fats. The main difference between the composition of goat milk and cow milk concerns the composition of the fat, that of goat milk containing a larger proportion of medium-chain triglycerides. The metabolic utilization of these compounds is fundamentally oriented towards their use as sources of energy, and they may even contribute to the synthesis of proteins. This study was carried out, using 40 rats at weaning, in order to determine whether, on the basis of their fat and protein composition, there is any difference between the nutritional utilization of the N and the energy from goat and cow milk. Eight animals were killed on arrival at the laboratory, and the rest were divided into four groups of eight animals and killed at the end of the experiment. Each group was given a different diet: diet 1 contained fat and protein from goat milk; diet 2 had fat from cow milk and protein from goat milk; diet 3 had fat from goat milk and protein from cow milk; diet 4 had fat and protein from cow milk. The animals were allowed to feed ad libitum for 30 d and a balance assay was performed during the final 7 d to determine N and energy utilization. At the same time and by the comparative slaughter method, the protein and fat deposition for each group was established. It was concluded that goat milk protein is more digestible than that of cow milk. Moreover, the metabolic utilization of digestible N was found to be dependent on the sources of both the protein and the fat in the diet; a higher degree of utilization was recorded for the digestible N obtained using diets with protein or fat from goat milk. Consumption of diets with goat milk fat led to a lower level of thermogenesis associated with protein oxidation and a higher one for that associated with fat oxidation, which in turn implied a protein-sparing effect of the goat milk fat. These results should be taken into account when deciding upon the type of goat milk to be used (whole, skim or semi-skim), in accordance with the dairy product to be produced from this milk.

Energy utilization in broilers as influenced by supplementation of enzymes containing phytase or carbohydrase activities was investigated. Day-old male broilers (480) were allocated to four slaughter groups, thirty broilers in the initial slaughter group and 150 broilers in each of the final slaughter groups on days 7, 14 and 21. Broilers in each of the final slaughter groups were allocated to five treatments in a randomized complete block design, each treatment had six replicate cages of five broilers per replicate cage. The diets were maize–soyabean based with wheat as a source of NSP. The treatments were: (1) positive control that met nutrient requirements of the day-old broiler chick; (2) negative control (NC) deficient in metabolizable energy and P; (3) NC plus phytase added at 1000 FTU/kg; (4) NC plus cocktail of xylanase, amylase and protease (XAP); and (5) NC plus phytase and XAP. Gain and gain:food were depressed (P < 0·05) in the NC diet. Phytase improved (P < 0·05) gain at all ages and gain:food at days 0–14 and days 0–21. There was improvement (P < 0·01) in net energy for production, energy retained as fat and protein from days 0 to 14 and from days 0 to 21 in phytase-supplemented diet compared with the NC diet. Net energy for production was more highly correlated with performance criteria than metabolizable energy and may be a more sensitive energy utilization response criterion to use in evaluating broiler response to enzyme supplementation.

Conventional models of energy utilization by animals, based on partitioning metabolizable energy (ME) intake or net energy (NE), are reviewed. The limitations of these methods are discussed, including various experimental, analytical and conceptual problems. Variation in the marginal efficiency of utilizing energy can be attributed to various factors: diet nutrient composition; animal effects on diet ME content; diet and animal effects on ME for maintenance (MEm); experimental methodology; and important statistical issues. ME partitioning can account for some of the variation due to animal factors, but not that related to nutrient source. In addition to many of the problems associated with ME, problems with NE pertain to: estimation of NE for maintenance (NEm); experimental and analytical methodology; and an inability to reflect variation in the metabolic use of NE. A conceptual framework is described for a new model of energy utilization by animals, based on representing explicit flows of the main nutrients and the important biochemical and biological transformations associated with their utilization. Differences in energetic efficiency from either dietary or animal factors can be predicted with this model.

Whether the association with gut microflora modifies the energy metabolism of chickens was investigated by varying the metabolizable energy consumption level from zero to above the maintenance requirement in the germ-free and conventional states. Single comb White Leghorn chicks were either fasted for 3 d (Expt 1), or fed for 6 d at a fixed daily meal intake of 2, 5 or 8 g/d (Expt 2), or 5, 10 or 15 g/d (Expt 3). Changes in carcass energy deposition and heat production indicated that when no dietary energy was available the presence of the gut microflora could benefit the birds by reducing energy losses, whereas when dietary energy was supplied the efficiency of energy utilization was reduced by the presence of the gut microflora. It was concluded, therefore, that the heavy burden of the gut microflora modifies energy metabolism by exerting a buffering or a counter-productive action on the energy utilization of the chicken.

Four steers were maintained wholly by intragastric infusion of volatile fatty acids (VFA) and protein, together with a mineral–vitamin supplement. The infusion was given at three levels of energy, namely 450, 675 and 900 kJ/g live weight0·75, calculated to supply energy at 1·0,1·5 or 2·0 times that required for maintenance. The VFA provided 0·837 and the protein 0·163 of the energy infused. The molar proportions of individual VFA were varied so that the infusate contained 0·36–0·91 of acetic acid, 0·56–0·01 of propionic acid and a constant 0·08 of butyric acid. Heat production was measured in respiration chambers. Urine was analysed for N, urea, β-hydroxybutyrate and VFA. Blood plasma was analysed for β-hydroxybutyrate, free fatty acids, insulin and glucose. As the proportion of acetic acid was increased, and propionic acid reduced, there was no change in blood or urine metabolites or in heat production until acetic acid exceeded a proportion of about 0·75. At higher proportions β-hydroxybutyrate increased in plasma and urine, blood glucose and insulin tended to fall and urinary N excretion rose. At a proportion of acetic acid of > 0·80, acetate appeared in the urine and at > 0·86 heat production declined. The effect of level of infusion on the molar proportion at which plasma and urine metabolites changed was less clear. There was a tendency for the increase in β-hydroxybutyrate to occur at a slightly lower proportion of acetic acid at the highest level of infusion. It is concluded that differences in heat production that are observed between diets are probably not caused by differences in rumen VFA proportions. The reaction to a highly elevated proportion of acetic acid is to excrete β-hydroxybutyrate and acetate in the urine and so decrease rather than increase heat production. Regardless of level of infusion a metabolic crisis occurred when the proportion of acetic acid was above the levels found in the rumen content of normally-fed animals.

Thirty-two 160 kg dairy heifers were used to measure the effects of increasing dietary protein content on growth and heat production. A basal diet containing (g/kg) 550 sodium hydroxide-treated straw, 220 barley, 220 sugarbeet pulp and 10 urea was offered with 0, 76 and 152 g fishmeal/kg dry matter of the basal diet (F0, F1 and F2 levels respectively). The three diets were each given at two levels of feeding (low, L; high, H): 57.6 g/d per kg metabolic body-weight (W0.75) for the LF0 diet and 74.7 g/d per kg W0.75 for the HFO diet. Apparent digestibility of the diets increased in response to the addition of fishmeal. Mean dry matter digestibility values were 0.67, 0.67, 0.69, 0.66, 0.68 and 0.69 and those for acid-detergent fibre digestibility were 0.60, 0.63, 0.66, 0.58, 0.60 and 0.65 for diets LF0, LF1, LF2, HF0, HF1 and HF2 respectively. Nitrogen retention increased in response to both fishmeal and feeding level. Live-weight gains were 170, 296, 434 g/d for the LF0, LF1 and LF2 diets and 468, 651 and 710 g/d for the HF0, HF1 and HF2 diets respectively. There were significant effects of increasing the plane of feeding and the level of fishmeal in the diet on live-weight gain. Dietary effects on live-weight gains were accompanied by increases in mean energy retention of 23, 45, 82, 94, 160 and 152 kJ/d per kg W0.75 for diets LF0, LF1, LF2, HF0, HF1 and HF2 respectively, but no definite evidence was obtained that dietary supplementation with fishmeal modified the efficiency of utilization of metabolizable energy for growth.
