Lithotripsy methods show relatively low efficiency in the fragmentation of sialoliths compared with the success rates achieved in the destruction of renal calculi. However, the information available on the mechanical behavior of sialoliths is limited and their apparently tougher response is not fully understood. This work evaluates the hardness and Young’s modulus of sialoliths at different scales and analyzes specific damage patterns induced in these calcified structures by ultrasonic vibrations, pneumoballistic impacts, shock waves, and laser ablation. A clear correlation between local mechanical properties and ultrastructure/chemistry has been established: sialoliths are composite materials consisting of hard and soft components of mineralized and organic nature, respectively. Ultrasonic and pneumoballistic reverberations damage preferentially highly mineralized regions, leaving relatively unaffected the surrounding organic matter. In contrast, shock waves leach the organic component and lead to erosion of the overall structure. Laser ablation destroys homogeneously the irradiated zones regardless of the mineralized/organic nature of the underlying ultrastructure; however, damage is less extensive than with mechanical methods. Overall, the present results show that composition and internal structure are key features behind sialoliths’ comminution behavior and that the organic matter contributes to reduce the therapeutic efficiency of lithotripsy methods.

The characteristics of the intense vorticity structures (IVSs) near the turbulent/non-turbulent (T/NT) interface separating the turbulent and the irrotational flow regions are analysed using a direct numerical simulation (DNS) of a turbulent plane jet. The T/NT interface is defined by the radius of the large vorticity structures (LVSs) bordering the jet edge, while the IVSs arise only at a depth of about
from the T/NT interface, where
is the Kolmogorov micro-scale. Deep inside the jet shear layer the characteristics of the IVSs are similar to the IVSs found in many other flows: the mean radius, tangential velocity and circulation Reynolds number are
,
, and
, where
, and
are the root mean square of the velocity fluctuations and the Reynolds number based on the Taylor micro-scale, respectively. Moreover, as in forced isotropic turbulence the IVSs inside the jet are well described by the Burgers vortex model, where the vortex core radius is stable due to a balance between the competing effects of axial vorticity production and viscous diffusion. Statistics conditioned on the distance from the T/NT interface are used to analyse the effect of the T/NT interface on the geometry and dynamics of the IVSs and show that the mean radius
, tangential velocity
and circulation
of the IVSs increase as the T/NT interface is approached, while the vorticity norm
stays approximately constant. Specifically
,
and
exhibit maxima at a distance of roughly one Taylor micro-scale from the T/NT interface, before decreasing as the T/NT is approached. Analysis of the dynamics of the IVS shows that this is caused by a sharp decrease in the axial stretching rate acting on the axis of the IVSs near the jet edge. Unlike the IVSs deep inside the shear layer, there is a small predominance of vortex diffusion over stretching for the IVSs near the T/NT interface implying that the core of these structures is not stable i.e. it will tend to grow in time. Nevertheless the Burgers vortex model can still be considered to be a good representation for the IVSs near the jet edge, although it is not as accurate as for the IVSs deep inside the jet shear layer, since the observed magnitude of this imbalance is relatively small.

The dynamics of passive scalars and tracers during the formation and subsequent persistence of a laminar tripolar vortex, obtained through an unstable monopolar vortex seeded with a k = 2 azimuthal perturbation, is investigated. Two-dimensional direct numerical simulations of passive scalars with Schmidt numbers Sc = 0.1, 1, 10 and 100 are performed. The scalar variance for the four cases is analysed, as well as the different dispersion patterns up to 10 times greater than the time for formation of the tripolar vortex. During the formation of the tripole, an accelerated scalar dissipation is observed. That dissipation is connected to the advection-dominated processes associated with the growth of the perturbation mode. During that process, the patterns of mixing of the different passive scalars are very much the same as for vorticity. This stage of accelerated dissipation is preceded and followed by stages of diffusion-dominated scalar dissipation. Passive Lagrangian tracers are used to explore the transport of fluid elements during the evolution, and to provide a detailed view of the tripolar vortex formation and behaviour for longer times. Chaotic mixing was studied by examining patterns of spatial variation of finite-time Lyapunov exponents. As the perturbation grows and the tripolar vortex is formed, two large regions of regular flow, divided by a region of chaotic flow, form for each satellite. When the tripole is fully formed, it is composed of three distinct regular regions, corresponding to the core of negative vorticity and the two satellites of positive vorticity. The comparison between the evolution for vorticity, concentration, randomly distributed particles and Lyapunov exponents shows that transport occurs mainly in the regions of chaotic flow that surround the tripolar vortex after its formation. For longer times, both the chaotic/regular flow interfaces and the vorticity gradients are responsible for the integrity of the tripolar system.

Marine algae are easily produced and are good sources of Fe. If this Fe is bioavailable, algae consumption could help to combat Fe deficiency and anaemia worldwide. The objective of the present study was to evaluate Fe bioavailability, polyphenol content and antioxidant capacity from three species of marine algae distributed worldwide. A total of eighty-three subjects received maize- or wheat-based meals containing marine algae (Ulva sp., Sargassum sp. and Porphyra sp.) in different proportions (2·5, 5·0 and 7·5 g) added to the water to prepare the dough. All meals administered contained radioactive Fe. Absorption was evaluated calculating radioactive Fe incorporation in subjects' blood. The three species of marine algae were analysed for polyphenol content and reducing power. Algae significantly increased Fe absorption in maize- or wheat-based meals, especially Sargassum sp., due to its high Fe content. Increases in absorption were dose-dependent and higher in wheat- than in maize-based meals. Total polyphenol content was 10·84, 18·43 and 80·39 gallic acid equivalents/g for Ulva sp., Porphyra sp. and Sargassum sp., respectively. The antioxidant capacity was also significantly higher in Sargassum sp. compared with the other two species analysed. Ulva sp., Sargassum sp. and Porphyra sp. are good sources of bioavailable Fe. Sargassum sp. resulted in the highest Fe intake due to its high Fe content, and a bread containing 7·5 g Sargassum sp. covers daily Fe needs. The high polyphenol content found in Sargassum sp. could be partly responsible for the antioxidant power reported here, and apparently did not affect Fe absorption.
