540. A device for rapidly churning small quantities of cream

Cream samples (200–500 ml.) are churned in about 1 min. in a covered beaker by an agitator directly coupled to a ¼ h.p. electric motor. The beater sweeps the whole of the enclosed space so as to prevent thickened cream from collecting in places where it can escape agitation.
